Have you heard about The Vegan Chef Challenge? The Bull City Mayor’s Challenge, @veganoutreach @plantbasedtreaty and Veganspired are co-hosting this challenge from January 1st to January 31st to celebrate vegan cuisine and inspire local restaurants to offer more plant-based options on their menu.  I was recently invited to indulge in @zwelisekhaya new vegan offerings that will be part of the challenge, and was blown away by the taste and presentation!  Vegan where!?!? As usual @theatreraleigh did not disappoint and did it big with their elevated Gatsby-style immersive dinner and wine pairing tasting menu and performance. I even caught a glimpse of the mysterious Jay Gatsby himself before heading home to watch the acorn drop in my pj’s! Koi Ramen is a must-try! I have driven past this place so many times, so I’m glad I finally decided to stop. I would say it’s a hidden gem, but it was so busy that apparently I am the only one who has slept on this spot! The atmosphere is cozy and the service is friendly. Definitely going back to try other ramen flavors.
