Number 3 was chimichurri over chicken with rice & broccoli. Super simple and packed with flavor 😋
Chimichurri is an Argentinian sauce typically made with parsley, but when I tried this recipe made with cilantro, I could never go back.
I smashed together cilantro, garlic, shallot, vinegar & spices using a mortar and pestle and used it both as a marinade and sauce.
An added bonus to prepping sauces ahead of time is that the flavors had so much time to marry; it was good on Sunday when I made it and even better today.

In light of recent life changes, I thought I’d try my hand at a form of content creation I have always loved but been scared to try: food blogging!
If you know me, you know that I’m a huge foodie, and cooking for others is one of the main ways that I show others my love for them. I’ve been taking silly videos of myself cooking for years, but have never been brave enough to post them… until now!
Since I have a whole week of dinners planned and prepped, I figured I’d start now!
First up: Strawberry Salad with Balsamic Chicken.
This salad is the perfect balance of sweet, salty, and tart, and is one of the best summer salads EVER!!

Outfit of the day, 10-mile hike edition 🥾
I LOVE watching outfit of the day videos, so naturally I had to make Sterling film one with me before we set out on our hike today (thank you babe for being such a good sport💙)
In a little over 5 weeks, we’ll be backpacking the Wonderland trail around Mount Rainier!!
The Wonderland is a 93-mile loop around the mountain that we’ll do over 10 days with a group of around 10 others! You have to draw a permit to hike it - Sterlings family drew the permit this year and were kind enough to invite me, too.
I’ve never backpacked before, so we’re training by getting in longer hikes to get prepare for some of the long, high incline days. I’ve done a good amount of camping and hiking, so I’m super excited for the trip but equally as nervous since I have no idea what to expect.

What am I getting a PhD in? Great question, I’d love to tell you 😇
Prevention science is an interdisciplinary field (i.e., pulls from fields like psychology, public health, communication, etc.) focused on improving health and well being through evidence-based practices. Prevention science is broad, and researchers focused on prevention science study a wide range of topics and developmental periods.
I first learned about prevention science while doing my bachelor’s degree at WSU (WSU offered the 1st PhD in prevention science🎉), and I immediately was drawn to the idea that by focusing on prevention, we could save so time, money, and help reduce suffering in our world.
I’m hopeful that eventually, the research that my wonderful colleagues and I work on will help contribute to these practices to make a positive impact on the world ✨

Run.
That’s literally it. You don’t have to run fast, or for a long time. As long as you’re going faster than how you walk, you are running, and you are a runner. Claim that title proudly!!
For a long time I shied away from posting about running or calling myself a runner because I didn’t feel like a ‘real’ runner. I didn’t grow up doing track or XC, I’ve never raced a half marathon, and I still run a 10+ minute mile. But I still lace up my running shoes and go, and that alone makes me a runner.
If you ever feel worried about sharing about your passions, whatever they may be, because you think you aren’t ‘enough’… take THIS POST as a sign that your brain is lying to you, and do it anyways! 🏃🏼♀️💫🤍
