It’s December 1st and we got a couple inches of snow today. Perfect day to for the start of my holiday baking! Typically the first Christmas cookies I bake are my Molasses Cookies. Here’s a fun way to use extra apple pie filling and pie crust scraps! I realized I had made too much apple filling for the apple pie I made for my husband’s birthday so I removed some and put it in another little baking dish. I took the scraps from the pie crust and used scissors to cut it into little pieces to dot the apple pie filling. I baked it in the oven at 375° for about 30-35 minutes until the crust bits were golden brown. I forgot to take a picture when it came out of the oven. You’ll have to just trust me that it turned out great and was a great way to use up those scraps. 😁#applepiefilling #piecrust #fromscratch #usingupscraps #bakingday

We had our first snow of the season today and although it didn’t stick the mountains around us now have a dusting of snow on top. The past couple days I’ve felt like I’m coming down with a head cold so I’ve been taking it a little easy. I pulled some soup out of the freezer and baked a couple loaves of my honey wheat bread. Whelp, these pumpkin cheesecake bars didn’t turn out exactly the way they were supposed to. I realized AFTER I had put the cream cheese mixture on top why it was way too thin…I used 8oz of cream cheese instead of 16oz! 🤦🏼♀️ The cream cheese should have been thick and made a thatched pattern over the top of the cake. I’ve made this recipe so many times so I’m going to blame pregnancy brain for this mistake. I decided to give fermented garlic honey a try. I should have started this back in the summer because it takes a month to ferment. I’ve read that fermented garlic honey is good for your immune system, digestion and is anti-inflammatory. After I added the garlic and honey (raw, local honey) to the jar I flipped it upside and back a few times to make sure the garlic was fully submerged in the honey. I read to tip it upside everyday for the first couple weeks of fermentation and to loosen the lid a little each day to let the gas release. Nothing makes your house smell like fall quite like a simmering pot of homemade applesauce. I used the apples Luke harvested for me from our little wild apple tree yesterday. I didn’t use a recipe, I just winged it. I used honey for the sweetener, added some lemon zest and juice, cinnamon and freshly ground nutmeg. The finished applesauce is delightfully tart with a little bit of sweetness, just the way I like it. We have one apple tree on the property on a very steep hill overlooking the river. It’s a bit wild at this point but it’s still producing apples every year. Luke climbed down the steep hill and got cut up by brambles to harvest the apples for me. I’m so happy September is here. We’ve said goodbye to the August heat and are welcoming the milder, sunny days of September. There’s something magical about the in-between season when summer is passing but it’s not quite fall. I’m heading into the second trimester of pregnancy this next week. Im still dealing with 24/7 morning sickness but I’m hoping it will start to ease up in the next week or two. And I’m hoping my energy will return. After my walk down at the river this morning I was completely wiped out.
