These are hands down the best pancake recipe I have found in years. Whipping the egg white before folding in is the key. And you'd never know they are gluten-free, but fine to use your regular flour as well. Enjoy!

3/4 cup Gluten-Free Flour or regular flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup whole-milk ricotta cheese
2 large eggs, separated
1/3 cup milk (any milk of choice)
1 teaspoon grated lemon zest plus
4 teaspoons juice
1/2 teaspoon vanilla extract
2 tablespoons unsalted butter, melted and cooled
Pinch cream of tartar
1/8 cup sugar
1-2 teaspoons vegetable oil
1/2 cup of blueberries (optional)

1. Whisk four blend baking soda, and salt together in medium bowl, and make well in center. Add ricotta, egg yolks, milk, lemon zest and juice, and vanilla and whisk until combined, Stir in melted butter.
2. Using stand mixer fitted with whisk (or a hand mixer), whip egg whites and cream of tartar on medium-low speed until foamy, about 1 minute. Increase speed to medium-high and whip whites to soft, billowy mounds, about 1 minute. Gradually add sugar and whip until glossy, soft peaks form, 1 to 2 minutes.
3. Transfer half of whipped egg whites to batter and whisk gently until mixture is lightened. Using rubber spatula, gently fold remaining egg whites into batter (as well as blueberries or other fruit if you are using them).
4. Heat 1 teaspoon oil in 12-inch nonstick skillet over medium heat until shimmering, 3 to 5 minutes. Using ladle or 1/4 cup measure, portion batter, leaving 2 inches between each portion. Using back of ladle or spoon, spread each portion into 4-inch rounds. Cook gently until edges are set and first side is deep golden brown, about 2 1/2 minutes. Flip pancakes and continue to cook until second side is golden brown, about 2 1/2 minutes longer, Serve immediately.

Wow, what a transformation. We can't wait to try it out!

The wait is over and the time has come!

The interior transformation here at 114 Water Street is now complete. We can’t wait for you to see it and to debut the brand new 71° West Atlantic Steakhouse on historic Plymouth Harbor!

We will officially open tomorrow night for dinner at 4pm.

We will be open every day after that for lunch at 11:30am and begin dinner service at 4pm. We will not be open for lunch tomorrow.

Our menu will be available for viewing on our website, www.71westplymouth.com, ahead of tomorrow night’s dinner service.

In the near term, we will seat solely on a walk-in basis. Reservations will be available at a later date.

Seating will not be available outside just yet but will be open soon.

As tomorrow is our very first dinner service, we simply ask for your patience as our entire team and kitchen adjusts to the newness of it all. We will welcome in as many guests as we possibly can tomorrow night and this weekend but may need to operate at a semi-limited capacity due to the customary learning curve inherent to opening a new large restaurant.

We are beyond excited to welcome you over the days and weeks ahead and sincerely hope that you enjoy taking in the new sights, the ocean views from the second floor (!!!) and of course, our food.

We look forward to being a new part of the Plymouth dining scene & community and very much look forward to seeing you soon!
