Recipe below-1.25 lbs Ground Beef, we used 85/15-1 Yellow Onion, diced-6 Cloves Garlic, minced-3 C Beef Broth-1 C Heavy Cream-1 t Italian Seasoning-1 t Red Pepper Flakes-1 t Paprika-Salt and Pepper to taste-2-3 T Tomato Paste-1 lb Pasta Shells-5 oz Sharp Cheddar Cheese-Chives to garnish**Dutch Oven, Med Low heat, add some olive oil**Add Onion, Red Pepper Flakes, Italian Seasoning, S&P. Cook 6-8 min until tender**Add Garlic, cook until you can smell it, less than a minute**Add Ground Beef, Salt, Pepper, Paprika…brown it**Make room for Tomato Paste in middle and cook it for a few minutes**Bring it all together**Add Beef Broth and Heavy Cream, bring to light boil**Add Pasta Shells, lower to simmer, 16 minutes seems perfect**Add Cheddar Cheese**Taste it and season as you like**This would be a good time to toss in some butter **Garnish with Chives#creamypasta #pasta #comfortfood #beefpasta #hamburgerhelper #petermillar #3piecesofpecan #fyp
Breakfast for Dinner is pretty normal around our house and this combo hits just right.Steps-8’ Non Stick Skillet, Medium heat or a little lower, add 1 T Butter and melt-Add 2 Cups of frozen shredded hashbrowns, even em out and walk away for 20 minutes-Drizzle w Olive Oil and pinch of salt, flip em-Flipping them is easy….just give it a shake and make sure the potatoes are loose, lil flip of the wrist and land em back in the pan!-Add more butter around the edges.-15 more minutes, walk away. -Remove from pan and drop on plate-Add a touch of olive oil to pan and fry 3 eggs. I usually cook them 4-5 minutes and never flip. Season as you wish, I used Traeger Breakfast Rub, it is outstanding-Serve Eggs right on top of Hashbrowns-Top with whatever you like at this point!-Last night we topped with 2 pieces of chopped up bacon, cheddar cheese, 1/2 of an avocado sliced, big portion of fire roasted green chile and one of my favorite hot sauces Yellow Bird Jalapeño.-After my first bite and off camera I added some Sour Cream as well. A close friend recently made this at a holiday gathering and my wife came home raving about this soup, luckily she shared the recipe and we gave it a shot last night, INCREDIBLE! A bit of work, but 2 hours total in prep and cooking and it was done. Worth your time! Recipe below-2lbs Chicken Breast, cubed-1 Red Bell Pepper, diced-1 Yellow Onion, diced-1 Poblano Pepper, diced-3 Celery Stalked, diced-1C Roasted Corn, frozen-2 Jalapeños, diced no seeds-3 Gloves Garlic, minced-4oz Roasted Green Chile-1 Stick Butter-3/4 C Flour-1 Pint Heavy Cream-32oz Chicken Stock-2 Cans White Kidney Bean, rinsed drained-1T Cumin-1/2T Onion Powder-1/2T Garlic Powder-1T Chili Powder-1/4tsp Cayenne-1/4tsp Green Chile Flakes or Powder-Salt and Pepper to taste-1/4C Cilantro, chopped-Olive Oil**Dutch Oven (we used 9 3/4qrt) medium heat**Add Olive Oil and drop in chicken w S&P, cook for 3-5 minutes max**Add all vegetables, green chile and garlic, cook until tender, less than 10 minutes**Add Butter and let it melt**Add flour and incorporate well to all is coated**Add heavy cream. Every Christmas growing up my grandmother would bring “Texas Munchin” to our home in Oklahoma over the holidays. My mom still makes it every year and now we do to. A bowl of this with a Diet Coke is beyond satisfying. We package most of this up and give to friends and of course leave a bit for us. Enjoy your Sunday! Recipe Below-1 Box Rice Chex, family size-1 Box Corn Chex, family size-1 Box Wheat Chex-1 Large Bag Pretzel Sticks-2-4 bags of Fried Pork Rinds-Large container of mixed nuts, we add another 16oz of pecans-2lbs Butter, unsalted-1/4 C Bacon Fat, we used @baconupbacongrease -6 T Worcestershire Sauce-Hot Sauce of choice, we probably use 1 T ish-3.5 T All Spice-3 T Garlic Powder-2 tsp Lawry’s Seasoned Salt-1 tsp Cayenne Pepper**Preheat Oven to 235 Degrees**We used 2 Foil Pans 20x12**On Med Low heat in sauce pan melt the butter, bacon fat, Worcestershire sauce and hot sauce.**Add dry spices, whisk well and turn off heat**Equally distribute all the dry ingredients to the pans and mix them up well. Lot of ways you can do this. My mom puts it all in a trash bag and mixes it up first.**Make sure your butter concoction is well mixed as the seasoning will move to bottom of pan. BREAKFAST CASSEROLE is always a good idea around our house! No rules here just make it how you like it. This one was very good! Recipe below-2lbs Breakfast Sausage, we use 1 Hot, 1 Sage-16oz Shredded Potatoes or Frozen Hash Browns-3T Butter -12 Eggs-1 Cup Heavy Cream-12oz Cheddar Cheese or cheese of your choice-1 tsp Dry Mustard-Salt and Pepper as you wish-Hot Sauce of choice**Brown the sausage, drain grease**3T Butter on griddle, lay out hashbrowns and cook 5-6 minutes per side on Med to Med High**Big Bowl, 12 Eggs and Heavy Cream, whisk well**Add Dry Mustard, Salt and Pepper**Add Browned Sausage**Add 8oz Cheese**Mix Well**Butter a 9x13 Baking Dish and add Hashbrowns to bottom**Add Edd Sausage mix, level out**Cover with lid or foil**Oven 350 for 30-40 minutes**Add remaining cheese to top, 350 for 10 minutes and finish on broil for that crispy top**Serve immediately with some hot sauce**Can prepare night before and cook in morning as well**Enjoy#breakfastcasserole #breakfast #petermillar #3piecesofpecan #holidaybreakfast #christmasbreakfast

ELK CHILI…..I think this is chili option number 8 or 9 we have posted over last few years. This one hits just right, incredible chili. Recipe….-2 lbs Ground Elk-12 oz Bacon, chopped up-14.5 oz can Crushed Tomatoes-14.5 oz can Diced Tomatoes-1 Green Pepper, Diced-2 Yellow Onions, Diced-3 Jalapeño’s, Diced, no seeds-1 Poblano, Diced, no seeds-5 Cloves Garlic, minced-16oz can Pinto Beans, drained rinsed-15.8oz can Great Northern White Beans, drained rinsed-2 C Beef Broth-2 T Tomato Paste-2 T Chili Powder-1 T Cumin-1 tsp Paprika-1 tsp Oregano-1 tsp Onion Powder-1 tsp Garlic Powder-1 tsp Cayenne-1 T of Salt and Pepper, more to taste as needed-Bacon Grease as needed, used about 1 T-Diced Onions, Cheddar, Sour Cream to top off**Big Pot, Med Heat, cook your bacon about 10 min**Remove a bit of grease or leave it all in, your call**Remove Bacon and set aside**Add Elk and brown, about 10 min**Remove Elk and set aside**Good time to make you seasoning mix, add it all together**Add Onions, Peppers, let them cook a few minutes**Add Garlic, let em cook a few minutes**Make some room in pot and add tomato paste, hit it with some seasoning…..let paste kiss the pot a bit and then mix it together**Good time to add some bacon grease**Add 1 C Beef Broth**Scrape up the bits and mix well**Add Elk, Bacon, Beans, Tomatoes**Mix it well and add rest of seasoning**Add more Beef Broth if you need it, we did**Heat down to simmer for at least 2 hours, covered**Stir it from time to time**Taste it and adjust to your liking, add whatever it needs**Serve it up, we top with Onions, Cheese and Sour Cream**Enjoy…..this will easily serve 6 people or more#chili #elk #elkchili #wildgamecooking #3piecesofpecan

White Chicken Chili in the Crock Pot is about as easy as it gets and this recipe I found from Chelsea Messy Kitchen, hit just right. Recipe below….make it! Enjoy your weekend. Recipe-1.25lb Boneless Chicken Thighs -10oz Green Chili Enchilada Sauce-8oz Hatch Green Chile-2 Cans White Beans -2 Cups Fire Roasted Corn -1 tsp Oregano-1 tsp Paprika-1 T Chili Powder-1 T Cumin-S&P to Taste-2 C Chicken Bone Broth **Dump it all in Crock Pot on High for 4+ hours, pull chicken out and shred, dump it back in-Add 8oz Cream Cheese softened**Turn heat to Low for another hour or so-Add Cilantro, we did a small amount for some color and pop of flavor-Juice of 1 Lime-Serve it up and use toppings of your choice. Last night we made a quick dinner with 2 things we love and eat often…..Chicken Cutlet and Caesar Salad. Decided we might as well film it but long day at work and did not feel like talking. Recipe below….
Caesar Salad
-1/2 C Olive Oil
-2 Cloves Garlic
-1 Egg, yes raw
-1/2 C Parmesan
-Juice 1 Lemon
-Anchovies, whole or paste to taste
-1 T Worcestershire
-1/2 T Dijon Mustard
-1/2 t Salt
-1/2 t Black Pepper
-1-2 Heads Romain Lettuce
-Croutons is you wish
**Big Wooden Bowl, add salt and garlic, make a paste
**Add anchovy, egg, Worcestershire, lemon juice and mustard while steadily whisking. We just keep the fork moving the whole time
**Slowly add Oil while mixing
**Add pepper and parm
**Drop in a head of Romaine Lettuce cleaned and roughly chopped, mix well, add shredded parm on top
Chicken Cutlet
**Thinly sliced Chicken Breast seasoned with Salt and Pepper
**3 Part dredge 1) Flour 2) Egg Wash 3) Panko….season flour with salt and pepper…..season panko with italian seasoning and Parmesan cheese
**Heat oil to 375 ish and cook for about 2 minutes on each side until they are done
Serve it up together and you have a great weeknight meal in less than 30 minutes.
