Reverse Sear Smoked Steak
1) set Traeger at 225 degrees, pecan wood. Let steak set at room temp while smoker heats up
2) 20oz New York Strip from . Sergio Seasoning from
3) Smoke for 1 hour, turn after 30 minutes. Internal temp reached 120
4) Traeger Flatrock griddle on high with some beef tallow on griddle. Sear steak for 1.5min per side. Finish steak by searing fat cap.
5) We used a meat press for consistent contact on griddle
6) Steak ended at 130 degrees internal
7) Slice it and enjoy. Big steak, leftovers w eggs for breakfast
