Chances are, if you’re having something sweet , Kathy Estes - Head of Pastry, had something to do with it!

Kathy’s (sometimes 14 hour!) days start at 7 A.M. and she is everywhere and anywhere she needs to be throughout the day to ensure smooth operation behind the scenes.

FUN FACT: During Estes’ first experience with the FIS Freestyle World Cup her team delivered 3,000 mini pastries via snowmobile to the VIP tent for 3 nights straight. The first night alone required 12 trips! 🍰⛷️

🍍 Recipe Spotlight: Pineapple Upside-Down Cake 🍰Ever wanted to bring a bit of Flanagan’s magic into your kitchen? Now you can! ✨ Here’s your chance to make this deliciously sweet, classic treat at home!

INGREDIENTS:

2 cups of sugar
2 1/2 sticks of margarine (room temperature, we recommend “Imperial” brand)
6 eggs
3 cups of white flour combined with 3 tsp baking powder
1/2 cup drained pineapple tidbits (save the juice)
1/2 cup pineapple juice
1/2 tsp vanilla

You’ll also need:

3 cans of pineapple slices (in juice)
1 small bottle of maraschino cherries (no stems)
2 cups pineapple juice and 1 cup sugar for syrup

MAKING THE DOUGH:

Blend sugar and margarine well with a wooden spoon or mixer until creamy.

Add 1 egg at a time, alternating with flour, mixing until smooth.

After blending in the third egg and flour, add 1/4 cup pineapple tidbits with flour. Blend well, then repeat with the remaining tidbits and flour.

Mix in the rest of the eggs and flour, add vanilla, and blend until smooth. Cover the dough to prevent drying out.

PINEAPPLE SYRUP:

Pour juice from 3 cans of pineapple into a pot with 1 cup sugar. Add extra pineapple juice to make 2 cups.

Bring to a boil, then reduce heat to medium, and cook until syrup thickens. Test by lifting a fork from the syrup; if a thread forms, it’s ready.

Pour half the syrup into a rectangular pan, coating all sides, then add remaining syrup to the bottom. Arrange pineapple slices in vertical lines, filling spaces as much as possible, and place a cherry in each hole.

ASSEMBLY & BAKING:

Pour the dough over the arranged pineapple and cherries, spreading evenly with a spatula.

Bake at 350°F for 50 minutes to 1 hour, until a toothpick comes out clean.

Let the cake rest for 1 minute. Loosen sides with a knife dipped in water to avoid cracking, then gently turn the cake onto a flat container lined with foil to catch any syrup.

Cool completely before serving.

🍅🍹DISHING DRINK SPOTLIGHT: ‘s 7452 Bloody Mary🍹🍅

Cheers to 300,000! That’s right, is likely to serve their 300,000th 7452 Bloody Mary this weekend.

See below to elevate your brunch game at home 🍅🍹

** Here’s what you’ll need **
-1.5 ounce of your favorite vodka (St. Regis recommends Alpine Distilling Persistent Vodka)
-16 ounce can tomato juice
-¼ cup lemon juice
-¼ cup Worcestershire sauce
-¼ cornichon juice
-2 teaspoons horseradish
-1 teaspoon Sriracha chili sauce
-½ teaspoon finely ground black pepper
-1 teaspoon celery salt
-Pinch of cayenne pepper

**For the wasabi celery espuma**
-2 ounces celery juice
-1/4 teaspoon wasabi powder
-1 ounce green apple juice
-a few parsley leaves

**For Garnish**
-Lime
-Hawaiian sea salt

**Instructions**
-Combine the drink ingredients in a glass and stir.
-Rub lime on the rim of a glass and dip it in black Hawaiian salt.
-Fill the glass 3/4 with ice. Add the drink mixture.

**To make the wasabi celery espuma**
-Combine the celery juice, wasabi powder, green apple and parsley.
-Blend the mixture and strain the foam into the top of the drink.

This fun twist on a classic Bloody Mary is sure to have your brunch guests excited for their next invite!
