Mini Pancakes with Custard šŸ„ž

Batter:
- 3 eggs
- 1.5 tablespoons white sugar
- 7/8 cup coconut milk
- 2 tablespoons heavy cream
- 2 teaspoons condensed milk
- 2.5 cups all-purpose flour
- 1 teaspoon instant yeast
- 1/2 cup pandan juice

Custard:
- 3 egg yolks
- 2.5 tablespoons white sugar
- 1 1/4 cups coconut milk
- 1/2 cup pandan juice
- 1/2 cup all-purpose flour

Instructions
1. Make the Custard
- Mix custard ingredients in a heatproof bowl.
- Cook over a double boiler, stirring until thickened (10-15 minutes).
- Let it cool.

2. Prepare the Batter
- Whip eggs and sugar until bubbly.
- Mix in coconut milk, heavy cream, condensed milk, and pandan juice.
- Add flour and yeast, mix until smooth.
- Rest for 15 minutes.

3. Cook the Pancakes
- Lightly grease a pan and heat on low.
- Pour batter and cook until bubbly.
- Add custard and any desired fillings.
