Ingredients:
Short ribs
Beef broth
Red wine
Worcestershire sauce
Tomato paste
Carrots
Celery
Red and green bell peppers
Yellow onion
Avocado oil
Butter
Chives
Salt
Pepper
Celery seeds
Garlic powder
Onion powder
Thyme

Season until you sneezin, but not on the food lol. But here is a super easy baked chicken recipe that is perfect as a savory comfort meal.
1. Season your cleaned drumsticks with adobo seasoning, cajun seasoning (do not over season), garlic powder, black pepper, and paprika.
2. On medium-high heat, add a drizzle of avocado oil to a medium sized pan.
3. Sear drumsticks for 2 minutes on each side.
4. In a baking dish, add one can of Campbells Cream of Chicken and sliced onions.
5. Place drumsticks on top and add 1/2 chopped celery.
6. Cover and bake for 90 minutes on 375F.
7. Optional: Broil for 2 minutes.
8. Serve and enjoy!

the perfect holiday cinnamon muffins with a delicious vanilla icing!

Here’s how to make them!

Ingredients:
2 cups flour
1 tbsp baking powder
1/2 tsp salt
1/3 cup sugar
1 large egg
1 cup milk
1/4 cup melted butter
1 cup brown sugar
1 tbsp cinnamon
3 tbsp melted butter
1 cup powdered sugar
3 tbsp milk
1 tsp vanilla extract

Recipe:
1. Preheat the oven to 425°F.
2. In a large bowl, whisk together the flour, baking powder, salt, and granulated sugar.
3. In a separate bowl, whisk the egg, milk, and 1/4 cup melted butter until well combined.
4. Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined.
5. In a small bowl, mix the brown sugar, cinnamon, and 3 tablespoons melted butter until fully combined.
6. Add half of the brown sugar mixture to the muffin batter and gently fold it in.
7. Divide the batter evenly among the muffin cups. Spoon the remaining brown sugar mixture over the top of each muffin.
8. Bake for 15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
9. As that bakes, combine powdered sugar, milk, and vanilla extract to make vanilla icing.
9. Once muffins are done, let them cool for a few minutes then top with vanilla icing.

If you need a dinner idea, you need to make this delicious lemon garlic pasta with chicken cutlets. This dinner was delicious!

Pasta:
1. In a saucepan, melt 2 tablespoons of salted butter.
2. Add 1/2 diced shallot, 3 freshly chopped garlic cloves, 1/2 fresh squeezed lemon, and a sprinkle of fresh chopped parsley. Stir around the pan until fragrant.
3. Add 1 pint of heavy whipping cream and 1/4 cup of pasta water. Season with garlic parmesan seasoning, salt, white pepper, red crushed peppers, garlic powder, onion powder, and a dash of parsley.
4. Let the sauce come to a simmer.
5. Once bubbling, reduce heat and add fresh parmesan and shredded italian style cheese.
6. Add pasta to the sauce and stir.

Chicken cutlets:
1. In a bowl, add plain breadcrumbs. Season with salt, pepper, parsley, garlic powder, and onion powder.
2. In a separate bowl, beat three eggs and add a splash of water.
3. Coat thin-sliced chicken breast in breadcrumbs then place in the egg wash. Let excess egg drip from chicken breast then place it back in the breadcrumbs. Firmly press the breadcrumbs onto the chicken.
4. In a hot cast iron skillet, fill the bottom of the pan w avocado oil.
5. Once oil is hot, place chicken breast in avocado oil. Cook on each side for 3 minutes or until golden brown and crispy.

I really love soft and creamy grits so here’s my special recipe.
1. Boil 3 cups of water and 1 cup of half and half (or heavy cream). Sprinkle in salt and pepper.
2. Add 1 cup of grits and stir thoroughly.
3. Remove from heat and blend with immersion blender up to 60 seconds.
4. Add 2 tbsp of butter, cover and cook on low to medium heat for 10-15 minutes.
5. Remove from heat and blend with immersion blender for an additional 60 seconds.
Optional: Add cheese of choice.
6. Serve and enjoy.

Recipe:
1 cup mango
1 cup peaches
1 cup orange juice
2 scoops mango peach dairy-free yogurt
1 scoop mango sorbetto
Line the cup with yogurt

Optional:
1 tsp digestion lemonade

Let’s make loaded mashed potatoes with salmon!

Mash Potatoes Ingredients:
Russet or yukon gold potatoes
Heavy cream
Garlic Paste
Garlic & Herb Butter

Sauce Ingredients:
Salmon
Heavy cream
Shallots
Red bell pepper
Minced garlic
Lemon
Garlic & herb butter
Olive oil

Seasonings:
Salt & Pepper
Garlic parm seasoning
No salt lemon pepper
Garlic powder
Paprika
Dried chives

This french toast was actually so good and made me want to host a cute brunch with the girls.

French toast:
1 cup heavy cream
2 eggs
1/4 cup brown sugar
1 tbsp cinnamon
2 tsp vanilla extract

Cream cheese topping:
4 oz whipped cream
3 tbsp heavy cream
2 tbsp powdered sugar
2 tsp vanilla extract

Salmon bites and veggies is literally my favorite combination. Chef’s kiss to a low carb dinner.
Salmon Bites (5-7 minutes)
1. Remove skin and cut salmon into bite size pieces. Pat dry.
2. Drizzle 1-2 top of avocado oil on the salmon.
3. Season with Old Bay, lemon pepper, garlic powder, and paprika. Mix with your hands to ensure each piece is well coated.
4. In a hot cast iron skillet, coat bottom of the pan with avocado oil.
5. Add salmon to the skillet, and sear on one side for 2 minutes.
6. Once golden and crispy, sear on the opposite side for 2 minutes. As it sears, add 1 tosp of butter, 1 tbsp of fresh minced garlic, and squeeze half of a lemon.
7. Toss around in the butter then remove.

Veggies (10-15 minutes)
1. Prep: Cut zucchini into bite size pieces, slice yellow onions into half moons, and cut broccoli florets from a fresh broccoli stalk.
2. Steam broccoli for 5-7 minutes.
3. In a saucepan on medium-high heat, add 2 tosp of butter and a drizzle of avocado oil.
4. Once melted, add your veggies to a pan.
5. Season with salt, pepper, garlic powder, and squeeze ½ lemon. Allow the veggies to sear for 3 minutes. Do not stir.
6. Toss veggies around the pan and allow it to cook through for 5 minutes. Stir every minute.
Allow it to sear but keep a close eye on them so they don’t burn.
7. Add 2 tbsp of fresh minced garlic. Toss and cook for an additional 2 minutes.
8. Once veggies appear to be your desired tenderness, remove from the pan.
9. Serve and enjoy!

Tips For Carving Pumpkins 🎃

Over the past few years, I have learned the best tips and tricks for carving pumpkins, especially with little kids! Here are the ones that have stuck with me!

1. Carve out the bottom instead of the top. This makes it easier to pop over a candle and glow at night.

2. Use a handheld mixer to loosen up all the insides. This makes it so much easier for my kids to scoop it out and saves a little time!

3. Use the cookie cutters. Using the pumpkin carving knife is definitely harder for little ones. My toddler loves using cookie cutters to create her spooky shapes. My older daughters love, carving the old school way, but they always end up switching to cookie cutters to create extra shapes.

4. Use Vaseline to lock in moisture. And sprinkle some cinnamon in your pumpkin to keep it smelling so good as well as keeping away the spiders, ants, and gnats.

Christmas Reindeer Chow

Here is a quick and easy snack to whip up for your holiday gatherings that is also pretty addictive!

Melt some peanut butter and semisweet chocolate and pour over some rice chex cereal. Give it a good mix and pop it in the fridge for 10-15 minutes. Add it to a bag with some powdered sugar and shake it until it is completely coated. Add your Christmas M&M’s and mini Reeses!

Delicious and looks festive too!

Cheesy Potatoes Au Gratin

If you are looking for a potato side dish for Thanksgiving look no further. These cheesy potatoes au gratin are seriously delicious and easy to make!

INGREDIENTS

•5 cups thinly sliced potatoes (yukon or russett)
•3 tbsp butter
•3 tbsp flour
•2 cups milk
•1/4 cup heavy cream
•1 cup shredded gruyere
•1 cup sharp cheddar
•2 tsp garlic powder
•1 tap onion powder
•1 tsp garlic salt
•2 tsp oregano
•2 tsp fresh thyme
•Salt & pepper to taste
•Bacon for top
• Fresh parsley or chives for top
