Sweet, Sticky, & Crispy Chicken w/ Crown Royal Peach Sticky Sauce & Potato Salad π₯π
My week been a little challenging to say the least, but my meals have been blazing lately! Ok, I guess it goes to show no matter what is or isnβt going on your talent will shine through.
So when I feel s**tty like this me and my pots work it out, and I worked it out with this sauce, chicken and potato salad.
I took the chicken out and didnβt know what I was going to do with it so I went with what came to my mind.
Crispy Chicken:
Oven: 400
Baked time: 60 minutes more if you want more crisp.
Cleaned the chicken and then I patted it dry and then added some mustard, black pepper, white pepper, garlic powder, lemon & rosemary sea salt, orange pepper, and some Sazon Seasoning. I had my oven preheated @400 and pre spayed my wire rack lined my sheet pan with aluminum foil, then placed chicken on the rack and baked for a 1 hour and 20 minutes so I could get my crispiness.
Crown Royal Peach Sticky Sauce:
Crown Royal Peach, peaches(cup) juice and all, orange juice, peach marmalade, chili sauce, chili flakes, honey, molasses, orange tangerine vinegar, brown sugar, tomato paste, garlic paste, horseradish, stone ground mustard and mixed well then heated on a low flame.
Once chicken was done I dipped the chicken into the sauce and placed back on rack put back in the oven for 15 minutes turning the oven off after 5 minutes.
Potato Salad: Yukon golden potatoes, celery, green onions, white onion, yellow bell pepper, sweet pickles, Best Foods Mayonnaise, sour cream, yellow mustard, black pepper, kosher salt, boiled eggs. Peel chop potatoes then boil until done stick a fork to see if done , boil eggs, chop veggies and once potatoes are done drain allow to cool for about 10 minutes, season potatoes with salt and pepper, add mayo, sour cream, pickle juice (pinch), mix add chopped eggs and mustard stir, garnish and serve slightly warm. I garnished with paprika and dried dill sprinkle.
