Food Safety consulting for local foods processors, process design and regulatory compliance. We are an organization whose mission it is also to assist the individual in understanding the food system and the relationship their food choices have to their health and grocery budget. Citizens are encouraged to develop an understanding the system from their own vantage point and to consider the role the

ir consumer choice has in shaping it. This work is achieved through their participation in hands-on workshops, and in discussions that include the origins of food and to how it can be used in recipes, menus and in yearlong eating patterns. Food labels and the relative nutritional or caloric densities of samples from the store are used for comparison. New skills are practiced in choosing nutritional programs, planning a pantry, finding seasonal produce for fresh preparation, or how it can be processed and set aside for the season. Examples are shown of how food raised in gardens or purchased from local sources provide clear alternatives to conventional grocery shopping or restaurant eating, with an emphasis the on comparative food quality, food safety and economy. The many issues related to our food purchases are discussed while the workshop participants are learning to process their own food and at the same time engaging their senses of touch, smell, taste, sight and sound. The importance of the Community Food System is introduced in strengthening local resilience, self reliance and sustainability. Particular emphasis is given to skills that support the family, as well as neighborhood and community participation, in the cooperative production and processing of food. The Preserving Community workshops are held in local commercial kitchens, using portable equipment, so as to strengthen and develop community relationships. A long term goal is to open a cooperative food processing center with a demonstration kitchen, and facilities for processing and storing local, fresh, seasonal and sustainable food.of the most local elements of the food system. We co-pack commercially produced, shelf-stable food items for local farms.

On April 2002, a man was walking through the woods near Hwy 105 in Cut-N-Shoot, Texas, when he came across a creature that seemed to be watching him from a distance. The creature was about 6 feet tall, had thick, dark-colored fur, and was crouched between two trees. It followed the man for about 20-25 minutes, keeping a distance of 15-30 yards between them. At one point, the man approached the creature, which then made a low growling sound and got down on the ground as if trying to hide its face. The man then saw a second, larger creature appear from across the trail. Both creatures watched him for a few more seconds before the larger one turned and walked away.

The man ran back home after this encounter. Over the next few years, the man continued to experience strange occurrences in the woods, such as feeling watched, hearing loud noises and screams, and smelling strange odors. His neighbor also reported hearing grunts and groans at night and seeing eyeshine in the trees. The encounter took place in the afternoon on a clear, sunny day.

So two of my friends and I two years ago were camping at a lake in upstate ny, you had to canoe/kayak into this lake through a river, on one of the banks of the river, one of my friends spotted this footprint, the footprint was bigger than the oar! I didn’t think about a size comparison picture at the time, you can see where the heel goes into the water pushing the grass into the water on the print. But what has confused me for so long is the thumb/ half a hand print on the side of it.

I have believed in bigfoot since I was a teenager . I know that they are out there because my bestie and I seen one while on a picnic and swimming at a place called Sandy Bottom. It's in the southern most part of West Virginia in Yukon. We always went to the swimming pond everyday. We had to walk down the railroad tracks for almost a mile then down a path off the tracks down thru some woods to a pond surrounded by sand . We were the only ones that went there . We were the only ones that knew about it. We had a run in with a creature that was 7 foot to 8 foot tall standing on 2 legs and run on 2 legs. I could tell you all about it but who would believe me. Everyone said it was a big bear. We know what we saw. My bestie is gone she past a few years back but if she was living she tell you exactly what I have told you. I will not ever forget that day and how we were chased up to the railroad tracks and then the creature just stopped at the path to the railroad tracks. My bestie and I went back and some of the evidence we seen was amazing. We didn't have phones then or a camera but we know what we saw. As we grew up and had children we swore we go back one day and see if we could see if the creature was still around. My bestie past away before we could go. I will never forget my encounter with this creature that I believe was Bigfoot.
