Today on our episode #421, ’s guest is Jorge Vallejo (), chef & owner of Quintonil () in Mexico City, a two Michelin star ⭐️⭐️ restaurant, which is currently ranked #3 on . Jorge opened Quintonil in 2012 along with his wife Alejandra Flores (), who is responsible for the restaurant’s exceptional hospitality; & is leading the charge of new-wave Mexican gastronomy, focusing on fresh, local ingredients and traditional Mexican flavors & techniques weaved into modern preparations. ✨

Shari was thrilled to dine again at Quintonil since her first visit in 2018, when she initially met Jorge, & sit down with him for this in-person conversation. She is also proud that Jorge is a contributor to her Chefwise book. ✨

As the founder of , Drew has helped launch the careers of celebrated chefs & collaborated with longtime partners like Robert De Niro, Francis Ford Coppola, & Robin Williams. His concepts have earned critical acclaim from , & he is also the recipient of numerous James Beard Awards. ✨

As CEO, Ellia is recognized for her innovative leadership, spearheading the operations & service programs across Na:eun’s establishments, contributing to their global acclaim.
