Garlic Herb Roasted Turkey Breast with Cranberries and Roasted Potatoes

1 boneless turkey breast (about 2-3 lbs)
3 tbsp olive oil, divided
4 cloves garlic, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme, chopped
Salt and black pepper to taste
1 lb baby potatoes, quartered
1 cup fresh or frozen cranberries
1 tbsp honey or maple syrup
Fresh rosemary sprigs (for garnish, optional)

Preheat the oven: Preheat your oven to 375Β°F (190Β°C).
Prepare the garlic herb rub: In a small bowl, mix together 2 tbsp of olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper.
Season the turkey breast: Rub the garlic herb mixture all over the turkey breast, making sure itβs well coated.
Prepare the potatoes and cranberries: In a separate bowl, toss the quartered potatoes with the remaining 1 tbsp olive oil, salt, and pepper. Arrange the potatoes around the turkey breast on a baking sheet or roasting pan. Add cranberries around the turkey and drizzle with honey or maple syrup.
Roast: Place the baking sheet in the preheated oven and roast for 45-60 minutes, or until the internal temperature of the turkey reaches 165Β°F (74Β°C) and the potatoes are tender. Stir the potatoes and cranberries halfway through roasting for even cooking.
Rest and serve: Remove the turkey breast from the oven and let it rest for 10 minutes before slicing. Garnish with fresh rosemary sprigs if desired, and serve with the roasted potatoes and cranberries.
