Chicken with Buttered Noodles
Ingredients:
For the chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
For the buttered noodles:
- 12 ounces egg noodles
- 4 tablespoons unsalted butter
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Directions:
1. Cook the egg noodles according to package instructions. Drain and set aside.
2. In a large skillet, heat the olive oil over medium-high heat. Season the chicken breasts with salt, pepper, thyme, and basil.
3. Add the chicken breasts to the skillet and cook for 6-7 minutes per side, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
4. In the same skillet, reduce the heat to medium and add the butter and minced garlic. Cook until the garlic is fragrant and the butter is melted, about 1-2 minutes.
5. Add the cooked noodles to the skillet and toss to coat in the garlic butter. Stir in the grated Parmesan cheese and chopped fresh parsley. Season with salt and pepper to taste.
6. Serve the buttered noodles with the cooked chicken breasts on top. Garnish with additional Parmesan cheese and parsley if desired.
