Crispy Pork Belly Chicharrones with Guacamole

Recipe 👇
2 lbs pork belly, sliced into 1 Inch strips
8 cups water- enough water to cover the pork belly
2 cup of cooking oil
1 small yellow onion (remove skin and cut into quarters)
1 tablespoon of black pepper peppercorns
6 bay Leaves
8 cloves of fresh garlic
1 tablespoon of salt

Instructions:
Using a very sharp or serrated knife, score the top/fat side of the pork belly about a 1/4 inch deep every 1/4 inch (this allows the pork skin to get crispy).
Bring water to a boil in a large cooking pot. Add in the black peppercorns, bay leaves, garlic, onion and salt.
Place strips of pork belly in the pot, cover and boil for 1 hour.
Remove pork belly from the pot. Place it on a sheet pan with paper towels and pat dry. Allow it to cool down.
Place in fridge overnight, uncovered, to allow it to air dry.
Heat oil in a deep frying pan to 350 degrees. Deep fry pork belly until crispy and golden brown on one side, then flip it over and fry other side (roughly 8-10 minutes per side). Remove from pot once both sides are crispy and place on paper lined sheet pan to absorb excess oil.
Sprinkle with salt or your favorite Cajun seasoning for extra flavor. Serve with Fresh Guacamole.

Tandoori Chicken Recipe
Ingredients:
For the First Marinade:
1 kg chicken (whole or pieces, skin removed)
1 tbsp lemon juice
1 tsp salt
1 tsp red chili powder

For the Second Marinade:
1 cup thick yogurt (curd)
2 tbsp ginger-garlic paste
1 tsp turmeric powder
2 tsp red chili powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp garam masala powder
2 tbsp mustard oil (or any cooking oil)
1 tbsp lemon juice

Optional: a pinch of red food color for vibrant color

Method:

1. First Marinade:

Wash the chicken and make deep slits on the pieces.

In a bowl, mix lemon juice, salt, and red chili powder.

Rub this mixture over the chicken pieces, ensuring it gets into the slits.

Let it rest for 20 minutes.

2. Second Marinade:

In a separate bowl, combine yogurt, ginger-garlic paste, turmeric, red chili powder, cumin, coriander, garam masala, mustard oil, lemon juice, and food color (if using).

Mix well to form a smooth marinade.

Coat the chicken pieces thoroughly with this marinade, ensuring it covers the chicken evenly.

Cover and refrigerate for at least 4 hours or overnight for the best flavor.

3. Cooking the Chicken:

Oven Method:

Preheat the oven to 220°C (425°F).

Place the marinated chicken on a baking tray lined with foil.

Bake for 20-25 minutes, then turn the pieces and bake for another 10 minutes until slightly charred.

Baste with butter or oil halfway through for juicier chicken.

Grill Method:

Heat a grill pan or outdoor grill.

Place the chicken pieces on the grill and cook on medium heat, turning frequently, until charred and fully cooked (about 20 minutes).

Tandoor Method:

Cook the marinated chicken in a preheated tandoor or clay oven until done.

4. Serving:

Garnish with lemon wedges, onion rings, and sprinkle with chaat masala.

Instructions:
1️⃣ Prepare the Lobster Tails:
Preheat your oven to 425°F (220°C).
Use kitchen shears or a sharp knife to carefully cut the top of each lobster shell lengthwise, exposing the meat. Gently pull the lobster meat out and rest it on top of the shell ("piggybacking" the lobster meat).
2️⃣ Make the Garlic Butter Sauce:

3️⃣ Cook the Lobster Tails:

Taco Soup in Slow Cooker

So easy and taste delicious!

Ingredients:
1 pound ground beef
1 onion diced
3 - 15 oz cans chili beans
1 can tomato sauce
1 can rotel diced tomatoes
1 cup water
2-3 Tablespoons taco seasoning
Salt and pepper to taste

In a pan, brown the beef. Then, add the onion till fragrant. Add 1 tablespoon of taco seasoning. Mix well to combine. Transfer the seasoned beef to the crock pot.
Add chili beans, tomato sauce, water and diced tomatoes. Add the rest of the taco seasoning. Cook in crock pot for 4 hrs high or 6-8 hours in low. Add salt and pepper if needed. Season to taste only. Sprinkle extra cheese and sour cream before serving. Enjoy!
