1-2 tbsp butter
3-4 ounces cream cheese
2 1/2 cups freshly grated Gouda cheese (not smoked)
1/2 cup Gruyere cheese
3 cloves garlic, minced and smashed with 1/4 tsp salt
1/8-1/4 tsp crushed red pepper flakes
Paprika (to taste)

Directions:

Preheat your oven to 350°F.
In a cast iron skillet over medium heat, melt the butter and sauté the onion, bell pepper, celery, and jalapeno until tender.
Add spinach, mashed garlic, and Old Bay seasoning, stirring until the spinach wilts.
Add the crab and shrimp, cooking for about 1 minute, until the shrimp begins to turn opaque. Remove the skillet from heat.
Mix in the cream cheese, Gouda, and Gruyere until combined. Sprinkle with paprika.
