RICOTTA & AMARETTI CRUMB CAKE
Indulge in the delicious flavors of Italy with this delicious crumbled cake featuring the creamy richness of ricotta and the irresistible crunch of amaretti.
This delicious dessert is a perfect combination of sweet and creamy, making it a delight for any occasion.
Servings: 8-10
Ingredients:
2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup unsalted butter, chilled and diced
1 tsp baking powder
1/2 tsp salt
1 cup ricotta cheese
2 large eggs
1 tsp vanilla extract
3.5 oz amaretti biscuits, roughly crushed
Confectioners’ sugar, for dusting
Instructions:
Preheat the oven to 350°F and grease a 9-inch round cake pan.
In a large mixing bowl, combine the flour, granulated sugar, baking powder, and salt. Add the chilled diced butter and rub it into the dry ingredients until the mixture resembles coarse breadcrumbs.
Reserve 1 cup of the crumble mixture for later use and press the remaining mixture into the bottom of the prepared cake pan to form an even layer.
In another bowl, whisk together the ricotta, eggs, and vanilla extract until smooth. Pour the ricotta mixture over the crumb base in the cake pan.
Sprinkle the crushed amaretti biscuits evenly over the ricotta layer.
Sprinkle the reserved crumble mixture over the top of the amaretti biscuits.
Bake in the preheated oven for 40-45 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Once cooled, dust the top of the cake with confectioners’ sugar.
