Creamy Ricotta Beef Stuffed Shells

Creamy Ricotta Beef Stuffed Shells combine savory beef, creamy ricotta, and gooey mozzarella inside tender pasta shells, all topped with a rich tomato basil sauce. This easy, comforting Italian-inspired dish is perfect for family dinners, gatherings, or a cozy night in. Bursting with flavor, it’s a crowd-pleaser that’s sure to satisfy!
Ingredients
20 large pasta shells
1 lb lean ground beef
1 cup ricotta cheese
1 ½ cups shredded mozzarella cheese, divided
½ cup grated Pecorino Romano cheese
1 large egg, beaten
2 ½ cups tomato basil sauce
1 tsp dried oregano
2 cloves garlic, minced
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
Preheat Oven: Set the oven to 375°F (190°C).
Cook Pasta: In a large pot, boil salted water and cook the pasta shells until al dente. Drain and let cool slightly.
Prepare Filling: In a medium skillet, brown the ground beef over medium heat. Add garlic and oregano, cooking until fragrant. Let cool slightly.
Mix Filling: In a bowl, combine the beef mixture with ricotta, 1 cup of mozzarella, Pecorino Romano, beaten egg, salt, and pepper. Mix well.
Assemble: Spread 1 cup of tomato basil sauce in the bottom of a baking dish. Fill each shell with the beef mixture, arranging them snugly in the dish. Pour remaining sauce over the shells, then sprinkle the remaining mozzarella on top.
Bake: Cover with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes, until cheese is golden and bubbly.
Serve: Garnish with fresh parsley, and serve warm.

Chocolate Dipped Italian Butter Cookies

Serves: Makes 2-3 dozen cookies, depending on how large the cookies are made to be.
Ingredients
1 C. Salted Butter, softened
½ C. Sugar
⅓ C. Powdered Sugar
2 Eggs + 1 Egg Yolk
1½ t. Vanilla
2½ C. Flour
¼ t. Salt
½ t. Baking Powder
1½-2 C. Dark Chocolate, melted
Chocolate Curls
Instructions
Preheat oven to 350 degrees. Line two baking sheets with parchment or non-stick mats.
Add butter and sugars to the bowl of a stand mixer fitted with a paddle attachment and beat until smooth, creamy and fluffy, about 3 minutes.
Add the egg and vanilla and beat until combined.
In a mixing bowl, whisk the flour, salt, and baking powder together and add to the butter mixture. Mix together until just combined.
Scoop dough into a large piping bag fitted with a large star tip.
Pipe strips of dough out onto prepared sheets. To make them as pictured, tilt the tip down while piping it out and slowly bring it to a 45 degree angle as you pipe,so that the tip of the cookie is slightly curled under.
**If the dough seems to stiff to pipe out, add a few tablespoons of milk to the dough.**
Bake cookies for 10-12 minutes or until the edges just look golden.
Cool on a wire rack.
When the cookies are cool, dip the tips in melted chocolate, and place on parchment paper to set. Sprinkle chocolate curls over the chocolate dipped cookies, if desired, but make sure to wait until the chocolate is no longer warm, but has not hardened.

1. Soft-Boiled Egg & Veggie Salad Bowl
Ingredients:
2 soft-boiled eggs
Mixed greens (lettuce, spinach, etc.)
Cucumber
Sweet corn
Tomato
Olive oil, salt, and pepper for seasoning
Instructions:
Toss the mixed greens, cucumber, corn, and tomatoes in a bowl.
Slice the soft-boiled eggs and place them on top.
Drizzle with olive oil and season with salt and pepper.
2. Egg & Chicken Protein Bowl
Ingredients:
1 soft-boiled egg
Shredded chicken breast
Steamed broccoli
Black rice
Salt and pepper for seasoning
Instructions:
Layer the black rice in the bowl.
Add shredded chicken and steamed broccoli .
Top with a soft-boiled egg and season with salt and pepper.
3. Roasted Veggies & Egg Bowl
Ingredients:
2 boiled eggs
Roasted sweet potatoes
Mixed greens
Salt, pepper, and olive oil for seasoning
Instructions:
Arrange roasted sweet potatoes and greens in a bowl.
Add sliced boiled eggs on top.
Drizzle with olive oil and season with salt and pepper.
4. Corn, Edamame, & Egg Buddha Bowl
Ingredients:
2 soft-boiled eggs
Cooked black rice
Steamed broccoli
Sweet corn
Edamame beans
Instructions:
Place cooked black rice at the bottom of the bowl.
Add steamed broccoli , sweet corn , and edamame.
Slice the soft-boiled eggs and place them on top.
