For bake 67 I shaped the dough and then cold-proofed them overnight in couché. Loaves went directly from fridge to oven.

I graded these slightly over-proofed due to more bubbles than strands across the expansion and the dense small to medium crumb pattern. They were still !

For I divided the dough after bulk-proofing and then moved to the fridge for an overnight cold-proof. The following day I allowed the dough to warm up to 55 degrees F and then I shaped and couchéd for a final proof.
