Vegan Chickpea Curry recipe for you:

Ingredients:

• 1 tablespoon coconut oil (or any vegetable oil)
• 1 onion, finely chopped
• 3 cloves garlic, minced
• 1 tablespoon grated ginger
• 1 tablespoon curry powder
• 1 teaspoon ground cumin
• 1 teaspoon ground coriander
• 1/2 teaspoon turmeric powder
• 1/4 teaspoon cayenne pepper (adjust to your spice preference)
• 2 cans (15 ounces each) chickpeas, drained and rinsed (or 3 cups cooked chickpeas)
• 1 can (14 ounces) diced tomatoes
• 1 can (14 ounces) coconut milk
• 1 cup vegetable broth
• Salt and pepper to taste
• Fresh cilantro, for garnish
• Cooked Basmati rice, for serving

Instructions:

1. In a large skillet or pot, heat the coconut oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
2. Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
3. Add the curry powder, ground cumin, ground coriander, turmeric, and cayenne pepper. Stir well to coat the onions and garlic with the spices.
4. Pour in the diced tomatoes, coconut milk, and vegetable broth. Mix everything together and bring the mixture to a gentle simmer.
5. Add the drained and rinsed chickpeas to the curry sauce, stirring to combine. Let it simmer for about 15-20 minutes, allowing the flavors to meld and the sauce to thicken slightly.
6. Taste the curry and season with salt and pepper according to your preference.
7. Serve the Vegan Chickpea Curry over cooked Basmati rice, and garnish with fresh cilantro.

Keto Bacon and Egg Cups

Ingredients:
- 6 large eggs
- 6 slices of bacon
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
- Fresh chives or green onions (optional, for garnish)

Instructions:
1. Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or butter.
