Chowgirls Killer Catering

This just in: Chowgirls is building a greenhouse!

Chowgirls Greenhouse Project, an innovative partnership with urban farmer David Gray of Bullthistle Gardens, is motivated by a spirit of collaboration. David recognized our work with Second Harvest Heartland as a “powerful mission” and offered to donate a 90’ x 30’ greenhouse for Minnesota Central Kitchen and Chowgirls.

The first challenge to make this dream come true was finding a space. Our own lot at Chowgirls HQ was not large enough, so we turned our eyes to underutilized parking lots within close proximity. Thanks to the community spirit of our Solar Arts Building landlord and our neighbors at Indeed Brewing Company, the big empty lot behind the Solar Arts Building was just the ticket.

We’ve built the frame, laid out rows of rich organic compost, and we’re all set to grow greens, herbs, peppers, beans, tomatoes, and cucumbers. A greenhouse can yield 3 times the harvest of an outdoor farm by using vertical growing methods and season extension practices. The heat from the asphalt will help accelerate the growing process. And a controlled growing environment ensures that crops are protected from elements such as extreme weather, disease and pest infestation. We hope to run the greenhouse through October, extending the season as long as weather conditions allow.

As we target at least 10% of each Minnesota Central Kitchen meal we serve to feature locally sourced ingredients, this project goes a long way to our goal to invest in Minnesota to feed Minnesota. Thanks for this great big idea, David. We look forward to the fruits of our labor in the coming months.

Very proud to have created this video about how Chowgirls has transformed their mission during COVID-19.

At the onset of Minnesota’s COVID-19 quarantine, Chowgirls shifted our work from high-end catering to emergency meal production, forming Minnesota Central Kitchen in collaboration with Second Harvest Heartland and Loaves Fishes. Since then, we’ve produced 147,466 meals for the Twin Cities’ food insecure. The story of our business pivot, told by our leadership team, is captured here in a production by Hayden Grooms.

Minnesota Central Kitchen was born out of a need for financial stability for our employees and as an emergency response to the increase in hunger and food insecurity in our community. Both COVID 19 and the call for racial justice have peeled back the curtain on the issue that BIPOC people are disproportionately failed by our healthcare system and a lack of access to healthy and nutritious food. Since beginning this work, we’re more aware of these issues than ever before. And we’re even more devoted to use our position and our resources to fight for justice, safety, equality, and change.

For Chowgirls, facilitating change starts with making sure that everyone’s most basic and essential needs are met — access to food and living supplies. We’re taking the responsibility that comes with our privilege as a white-owned business seriously and using our resources in a way that best benefits those in need by making balanced, healthy meals available on a daily basis, transporting supplies, and supporting local independent businesses.

We’ve always been a mission-driven company. As we have grown, so has our commitment to sustainability and our community. Looking into the future, we plan to continue using our logistical skills to feed folks beyond meetings and celebrations. Feeding people in need is a start in this long journey toward justice and equality. We’re in it for the long haul.
