Instructions
1. Heat olive oil in a large pot over medium-high heat. Add butter and melt it completely. Then, toss in the diced onion and sauté for about 3 minutes until softened and translucent. Ingredients
1 lb filet mignon (6-8 oz per steak, at least 1.5 inches thick)
2 tbsp olive oil

2 sprig rosemary fresh
2 sprig thyme fresh
salt and pepper to taste

Instructions
1. Take your filet mignons out of the fridge 30-45 minutes before cooking to ensure even cooking. This step keeps the outside from overcooking while the inside comes to temperature.

1 cup arborio rice
6 cups chicken broth
1 medium shallot peeled and finely chopped
4 cloves garlic minced
2 tbsp olive oil
8 oz mushrooms (227g)
½ tsp salt
½ tsp pepper
2 tbsp white wine
parmesan cheese
parsley

Instructions
1. Warm your chicken stock in a large saucepan, keeping it hot but not boiling.
2. In another large pot, heat olive oil over medium heat. Add chopped shallots and sliced mushrooms, cooking them until they're soft and have released their moisture, about 5-7 minutes.
3. Stir in minced garlic and butter, sautéing until fragrant for 2-3 minutes.
4. Add a cup of Arborio rice to the pot. Cook the rice for a few minutes until it's well-coated in oil and looks slightly translucent around the edges.
5. Season with salt and pepper, then pour in the white wine, stirring gently until mostly absorbed.
6. Gradually add chicken broth, one ladle at a time, stirring frequently. Allow each addition to be mostly absorbed before adding more. This should take about 18-20 minutes, resulting in creamy but al dente rice.

For Latik Syrup

5 pieces calamansi juice

Instructions

2. In a bowl, add the beef strips, minced garlic, brown sugar, salt, pepper, and soy sauce. Squeeze the calamansi juice and mix well to ensure that each piece is evenly coated with the marinade.
3. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 1 hour or overnight for best results.
