The Ultimate Shrimp Spinach Mushroom Stir-Fry (So Easy, So Delicious!)
A quick and flavorful weeknight dinner, this shrimp and spinach stir-fry comes together in under 20 minutes. Juicy shrimp, earthy mushrooms, and tender spinach are tossed in a savory sauce that will have you coming back for seconds.
Ingredients
For the Stir-Fry:
1 lb shrimp peeled and deveined
1 tbsp cooking oil like canola, vegetable, or avocado oil
1 bunch spinach
8 oz baby bella mushrooms, chopped 227g
1 medium onion chopped
4 cloves garlic minced
1/4 tsp salt
1/4 tsp pepper
For the Sauce:
1/4 cup water
1 tsp cornstarch
1 tsp sugar
1 tsp soy sauce
1 tbsp oyster sauce
1 tsp sesame oil
Instructions
1. In a small bowl, whisk together the water, cornstarch, sugar, soy sauce, oyster sauce, and sesame oil. Make sure the cornstarch is fully dissolved to avoid lumps. Set aside.
2. Heat the cooking oil in a large skillet or wok over medium-high heat. Add the shrimp, season with salt and pepper, and cook for 2-3 minutes, stirring frequently, until they turn pink and opaque.
3. Add the chopped onion and garlic. Cook for 2-3 minutes until they begin to soften. Add the chopped mushrooms and cook for another 3 minutes, stirring occasionally, until they're browned and have released their moisture.
4. Add the entire bunch of spinach to the skillet. It will seem like a lot, but it will wilt down quickly. Stir gently for 1-2 minutes until the leaves have collapsed.
5. Give the sauce a final stir, then pour it over the ingredients. Continue to stir everything together for 1-2 minutes as the sauce thickens and coats the stir-fry.
6. Remove the skillet from the heat. Serve immediately over rice or noodles, or enjoy it on its own.
