Ginataang bilo-bilo is a popular Filipino dessert! It's a sweet and creamy treat made with glutinous rice balls (bilo-bilo), coconut milk (gata), and various root vegetables and fruits like yucca, plantain, taro root, and tapioca pearls. Here's a simple recipe to make ginataang bilo-bilo:

Ingredients:

- 2 cups glutinous rice flour
- 1/2 cup water
- 1/2 cup coconut milk
- 1/2 cup sweetened condensed milk
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1/2 cup tapioca pearls
- 1/2 cup diced yucca
- 1/2 cup diced plantain
- 1/2 cup diced taro root
- 1/4 teaspoon vanilla extract
- Ice cubes (optional)

Instructions:

1. Make the glutinous rice balls: Mix the glutinous rice flour and water until a dough forms. Knead until smooth, then divide into small portions. Shape each portion into a ball.
2. Cook the rice balls: Boil water in a pot and add the rice balls. Cook until they float, then drain and set aside.
3. Prepare the coconut milk mixture: In a large pot, combine coconut milk, sweetened condensed milk, sugar, and salt. Heat over medium heat, stirring constantly, until the sugar dissolves and the mixture simmers.
4. Add the tapioca pearls, yucca, plantain, taro root, and vanilla extract. Cook for 10-15 minutes or until the vegetables are tender.
5. Add the cooked rice balls to the pot and stir gently.
6. Serve warm or chilled, garnished with a sprinkle of sugar and a few ice cubes if desired.

My yummy pancit 😋

Here’s a basic recipe for Pancit, a Filipino noodle dish:

Ingredients:

• 1 pound (450g) pancit noodles (rice noodles)
• 2 tablespoons vegetable oil
• 4 cloves garlic, minced
• 1 onion, sliced
• 2 cups cooked chicken, sliced into strips (you can also use shrimp, pork, or tofu)
• 1 cup sliced carrots
• 1 cup sliced cabbage
• 1 cup sliced bell peppers
• 1 cup sliced green beans
• 1/4 cup soy sauce
• 4 cups chicken or vegetable broth
• Salt and pepper to taste
• Calamansi or lemon wedges for serving

Instructions:

1. Cook the pancit noodles according to package instructions. Drain and set aside.
2. In a large skillet or wok, heat the vegetable oil over medium heat. Add the minced garlic and sliced onion, and cook until softened and fragrant, about 2-3 minutes.
3. Add the sliced chicken (or your choice of protein) to the skillet and cook until browned and cooked through.
4. Add the sliced carrots, cabbage, bell peppers, and green beans to the skillet. Stir-fry for a few minutes until the vegetables are tender-crisp.
5. Pour in the soy sauce and chicken or vegetable broth. Bring the mixture to a simmer.
6. Add the cooked pancit noodles to the skillet and toss everything together until well combined. Cook for an additional 2-3 minutes, allowing the noodles to absorb some of the flavors from the sauce.
7. Season with salt and pepper to taste.
8. Serve hot with calamansi or lemon wedges on the side for squeezing over the pancit. Enjoy!
