½ cup (1 stick) unsalted butter, melted & slightly cooled
¼ cup brown sugar (light or dark)
½ cup white sugar
1 teaspoon vanilla extract
6 tablespoons pumpkin puree
1 ½ cups all-purpose flour
¼ teaspoon salt
¼ teaspoon baking powder
¼ teaspoon baking soda
1 ½ teaspoons ground cinnamon
¾ teaspoon pumpkin pie spice
½ cup semi-sweet chocolate chips

for cupcakes themselves:
¾ cup all-purpose flour
½ cup cocoa powder
¾ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 large eggs
½ cup white sugar
½ cup light brown sugar
⅓ cup vegetable (or canola) oil
2 teaspoons vanilla extract
½ cup buttermilk
for chocolate buttercream frosting:
1 cup (2 sticks) unsalted butter, softened
3 ½ cups confectioners’ sugar
½ cup cocoa powder
3 tablespoons heavy cream or milk
¼ teaspoon salt
2 teaspoons vanilla extract

Mickey Mouse beignets (makes 12 large or 24 small) 🐭🏰 [yes I’m missing Disneyland]

ingredients:
¾ cup warm water
1 teaspoon active dry yeast
¼ cup sugar
1 egg, whisked
¾ teaspoon salt
½ cup heavy cream, or evaporated milk
2 tablespoons shortening
3 ½ cups all-purpose flour, more or less as needed
vegetable oil, for deep frying
powdered sugar, for dusting
also needed:
Mickey Mouse shaped cookie cutter (or shape of your preference)
large pot or Dutch oven
rolling pin
stand mixer with dough hook attachment

dog birthday cake (6 in round cake)🎂🐶
ingredients:
for cake-
¾ cup flour
½ teaspoon baking soda
¼ teaspoon baking powder
1 large egg
2 tablespoons peanut butter
2 tablespoons oil
¼ cup applesauce unsweetened
2 tablespoons honey
for frosting-
½ cup heavy whipping cream (I don’t recommend giving your dog the whole cake, especially smaller dogs. I have 2 pugs and only gave them about 1/4 each)

caramel turtle brownies (using 13x9 glass baking pan, makes about 12 brownies) 🍫
ingredients below ⇙
ghiradelli triple fudge brownie mix (plus what’s needed for the mix: 1 egg, ½ cup water, ½ cup vegetable oil)
ghiradelli caramel syrup to drizzle on top, before and after baking
1 cup chopped walnuts
4 tablespoons sea salt (optional) before baking (I didn’t have any milk to make these from scratch and had this prepackaged mix so i opted to put a twist on a traditional brownie mix)

Cinnamon sugar, for topping

for the cupcakes themselves:
1½ cups all-purpose flour
1½ teaspoons baking powder
¼ teaspoon salt ½ cup unsalted butter
1 cup granulated sugar
2 eggs
2 limes (zested and juiced)
3 tablespoons tequila
¼ teaspoon vanilla extract
½ cup buttermilk
to brush the cupcakes:
1-2 tablespoons tequila
for tequila lime frosting:
1 cup unsalted butter
2¾ cups powdered sugar
1 tablespoon lime juice
3 tablespoons tequila
a pinch of coarse salt and cut limes for topping
(I used patron silver for this recipe)
