Parmesan Crusted Chicken

2 large chicken breast, sliced in half
1 packet of Italian dressing mix (I use this as the seasoning, can buy a box from Food lion)
2 eggs
1/2 cup of grated Parmesan
1/2 cup of all purpose flour
Garlic powder
1 tablespoon of salted butter
2 tablespoons of olive oil

Slice the chicken breast in half and pat dry. Season both sides with the packet of seasoning. Whisk together the 2 eggs. Mix the grated Parmesan and flour together with some garlic powder, this will be your dredge. Dip the seasoned chicken into the whisked eggs and then straight into your dredge. Make sure to fully coat, really press the chicken into the dredge to create a crust.

Heat the butter and olive oil in a skillet over medium heat. Once hot, but not smoking, add your chicken. DO NOT move once added, you can tear the crust off the chicken. Love it and leave it alone until it's time to flip. Cook for 4 minutes on each side.

Once plated, top with parsley and fresh lemon juice.

Cajun Spaghetti, a spicy twist on a classic

1 bell pepper, diced
Half a sweet onion, diced
1 pound of ground beef
Half of a kielbasa link, sliced
1 jar of marinara sauce
1 box of spaghetti
1 tablespoon of minced garlic
2 tablespoons of Cajun seasoning
1 tablespoon of Worcestershire
1 teaspoon of garlic & onion powder
Salt & pepper to taste

Cook the ground beef, bell pepper and onion with salt, pepper and minced garlic over medium heat until brown. Drain the grease and set aside.

In the same pan, cook the kielbasa until brown. Add the ground beef back into the pan with the kielbasa. Add the garlic & onion powder, cajun seasoning, Worcestershire and jar sauce, then mix. Turn the heat to low, cover the pan with a lid and simmer for 30 minutes.

Cook the pasta per the package directions, don't forget to salt the water.

Top the pasta with your sauce and some parmesan or asiago cheese, enjoy!

Chicken Pot Pie, hold the veggies

When I say this is delicious and you need to make it, I mean it!

2 cooked shredded chicken breast, or you could use a rotisserie chicken
2 premade rollout pie crust
Half of a diced onion, I like sweet onions
4 mined garlic cloves or 1 tablespoon
Salt & pepper to taste
1 teaspoon each onion & garlic powder
2 teaspoons paprika seasoning
1 teaspoon dried thyme
1 teaspoon of fresh or dried parsley
2 tablespoons flour
3 tablespoons of salted butter, total
1 1/2 cups chicken broth
Splash of heavy whipping cream
1 egg

I boil my chicken breast in seasoned water (chicken bullion, salt, pepper, garlic powder, bay leaves) for about 25 mins to cook them.

To a pot over low-medium heat add 1 tablespoon of butter (let melt), the diced onions and some salt. Cook down the onions for 10 mins, until semi translucent. Add the minced garlic and cook for another 3 mins. Add onion powder, garlic powder, paprika, pepper, thyme and parsley then stir. After the seasoning have been mixed in, add the shredded chicken and stir. Add 2 tablespoons of butter, let it melt while stirring the chicken mixture. After the butter has melted, add 2 tablespoons of flour and stir. Slowly add the 1 1/2 of broth while stirring the mixture. Let it come up to a simmer and cook for 10-15 mins. Turn off the heat and add a splash of heavy whipping cream. Let it sit and cool down a little, make sure to taste. Extra salt will probably need to be added.

Roll out a pie crust and cover the bottom / sides of your pie dish, pressing down the dough. Pour your mixture into the dish. Top with the other pie crust and cut off extra dough with a knife from the sides. Crimp the edges of the pie crust, making sure to create a tight seal. Cut off extra dough after crimping, if needed. Cut slits into top of dough to create a vent. Whip / mix the 1 egg to create an egg wash. Brush egg onto top of dough and sprinkle some salt to finish it off.

Bake at 350 for 45 minutes

PSA: Put the pie dish on top of a sheet pan in the oven. You can add veggies if you want, add them in after the chicken broth. I found the paprika seasoning at TJ Maxx & Marshalls. Let this cool down for at least 10 mins before digging in.

Crockpot Honey Lime Shredded Chicken Sandwiches

Crockpot:
Season 2-4 chicken breasts with garlic powder, onion powder, salt and Trader Joes chili lime seasoning.
To the Crockpot add 1/4 cup of honey, 1/4 cup full sodium chicken broth, the juice from 2 limes and 2-4 (or 1 tablespoon) mined garlic cloves. Mix this sauce then add in chicken. Cook on low for 3-4 hours. Once finished, shred the chicken and add back into sauce, or just shred the chicken in the Crockpot.

Slaw:
1/2 bag of coleslaw mix, 1 tablespoon of vinegar, 1 tablespoon of oil olive, 1 teaspoon of honey, 1/4 teaspoon Dijon mustard, 1/2 teaspoon of sesame oil, salt & pepper and some chopped cilantro.

Spicy mayo:
Just Sriracha and mayo mixed together.

My favorite Crockpot beef roast recipe, this is sure to be a hit!

2.5 - 3 pound chuck roast
Pat dry with a paper towel, season both sides with whatever seasoning of your choosing. Sear for 3-5 mins on both sides, in a skillet with oil over medium heat. Transfer to Crockpot.

Mix together 2 packets of low sodium brown gravy, 1 cup red wine (merlot from Aldi's), 1 cup brewed coffee, 1/2 cup low sodium soy sauce, 3 tablespoons Worcestershire, 3 tablespoons cornstarch, 8-10 minced garlic cloves, 1 teaspoon each of onion powder, garlic powder and black pepper, 4 bay leaves and half of a sliced sweet onion. Add sauce to Crockpot, cook roast on low for 7-8 hours.

At the 4 hour mark, add carrots and mushrooms, you don't want to overcook the veggies. Once finished, shred beef and remove fat. If the gravy is too thick for your liking, add 1/2 cup beef broth. Serve over rice or mashed potatoes. Enjoy!
