Crispy Fish Sandwich with Tartar sauce and slaw ft. @Meanwhile in the PEPSI-verse… Ingredients: For the fish: White fish fillets (roughly the same size as the brioche buns) Brioche buns White flour Cooking oil Salt For the tartare sauce: ½ cup mayonnaise 1-2 small pickles, finely chopped ½ shallot, finely chopped 1 tbsp capers, roughly chopped 1 tsp lemon zest 1 tbsp lemon juice 1 tbsp roughly chopped dill Salt and pepper For the beer batter: 100g plain flour 50g corn starch or tapioca flour 5g baking powder Half a bottle of light beer Pinch of salt 1 egg For the slaw: 80g white cabbage, thinly sliced 2 tbsp tartare sauce Method: Season fish with salt and set on a wire rack then place into the fridge until needed In a bowl, mix together the mayonnaise, finely chopped pickles, shallot, capers, lemon zest, lemon juice, and chopped dill. Season with salt and pepper to taste. Set aside in the refrigerator. Next, prepare the slaw by combining the thinly sliced white cabbage with the tartare sauce. Mix well until the cabbage is coated with the sauce. Set aside. Heat the cooking oil in a saucepan to approximately 180°C (350°F). In a shallow dish, combine the plain flour, cornstarch or tapioca flour, baking powder, and a pinch of salt crack in an egg and gradually pour in the beer, whisking until the batter reaches a smooth and pourable consistency. In a shallow dish, add plain flour coat one piece of fish removing any excess flour. This helps the batter stick to the fish. Dip fish fillet into the beer batter, making sure it's evenly coated. Allow any excess batter to drip off. Carefully place the battered fish into the hot oil. Fry until the fish turns golden brown and crispy, which usually takes about 5-6 minutes, maybe longer depending on the thickness of the fish. Once cooked, remove the fish from the oil and place it onto a wire rack. Season with salt while still hot. Lightly toast brioche buns if desired. To assemble the sandwich, place slaw

Cuban Sandwich 👀 Ingredients: Serves 4 (with left over pork) 1.8kg pork shoulder bone in 6 garlic cloves 1 cup orange juice 1 cup lime juice 2 tbsp orange zest 2 tbsp lime zest 1/3 cup olive oil 1 shallot 1 tbspn oregano 1 tbsp cumin Salt 4 Cubano bread or soft baguette Ghee (clarified butter) 8 slices of ham 2 tbsp Yellow mustard 3 tbsp Mayonnaise 6-8 slices of Swiss cheese 3-4 Dill pickles Note* Preheat oven to 220°C/425°F (200°C fan). Roast, uncovered, for 30 minutes. Baste with pan juices. Reduce heat to 190°C/375°F (170°C). Satay chicken roti wrap with ABC Sweet Soy Sauce. ABC Sweet Soy Sauces can be found in major supermarkets and any other major asian grocers. Marinade Ingredients 1 Shallot 4 Cloves Garlic 1/2 tsp Coriander Powder 1/4 tsp Turmeric Powder 1/2 tsp Pepper 3 Tbsp Cooking Oil 1/2 Cup ABC Sweet Soy 2 Tbsp Soy Sauce 1 Tbsp Lime Juice 450g Boneless, Skinless Chicken Thighs 2 Cloves Minced Garlic 1/2 Cup Peanut Butter 1/4 Cup Coconut Cream 1/2 Cup Water 1/2 tsp Salt 2 Tbsp Lime Juice 1 Tsp Chili Flakes 4 roti frozen or fresh Sliced Cucumber carrot Julienned Asian Style Salad 200g Salad Mix bag 1/2 Red Chilli seeds removed and thinly sliced 10g Coriander leaves 10g Mint leaves Lime juice METHOD: Blend shallots, garlic, coriander powder, turmeric powder, and pepper in a food processor. Coat a frying pan with 2 Tbsp of cooking oil and sauté processed ingredients until fragrant. Place sautéd aromatics into a mixing bowl & add 1/4 Cup ABC Sweet Soy, 2 Tbsp Soy Sauce, and 1 Tbsp Lime Juice and combine well. Place chicken thighs into a bowl and mix until chicken is coated, cover with plastic wrap and marinate for 1 hour. Coat frying pan with 1 Tbsp of cooking oil and fry garlic on low to medium heat Add peanut butter, coconut cream, water, 1/4 Cup of ABC Sweet Soy,lime juice, salt and chilli flakes then stir occasionally and cook until thick but still a runny consistency. Grill the satay using low heat for 3-5 minutes, each side brushing each side with marinate sauce while cooking. Once cooked, slice chicken then set aside ready for assembly. Combine all salad ingredients into a large mixing bowl then squeeze lime and toss through. Place defrosted or fresh roti into a pan to toast lightly on each side. In the middle of the roti, place the salad mix followed by some sliced cucumbers and carrot then a serve of sliced chicken. Start rolling the roti tightly from one end, ensuring the fillings are contained within the roll. Use your fingers to press down and pack the
