When sh*t hits the fan, you improvise! Knocked over a whole pan of piccata sauce 😭 so I made a different sauce. Lightly dusted fried chicken with a lemon dill sauce and mashed taters.

Breakfast eggrolls 🥚 eggs, cream cheese, cottage cheese, jalapeño, kielbasa, lil extra cheese when you roll em. Made a sauce with other sauces lol

Enoki pancakes and scrambled eggs 🥰

1 bunch of enoki mushrooms
2 Tbsp ap flour or rice flour
2 eggs
2 Tbsp shredded carrot and yellow onion
2 Tbsp white part of the scallion, save the green tops for garnish
1Tbsp microplaned frozen jalapeño peppers (provided by ☺️)
1Tbsp chili oil
S & P for flavour

Trout benedict with avocado "toast", pepperoncini cream cheese, spinach, crispy skin trout, poached egg, hollandaise and dill 👌

Avocado "toast" is so simple to make!
Smash up an avocado
Crack an egg in
Handful of shredded cheese
Pinch of salt and pepper
Mix together, spread on a sheet to bake (12-15 min)or air fry (10-12 min) in the shape of toast. You can also make avocado fries this way, just shape them into fries!

I was craving bimbimbop, so I made something similar without having to run to the store 😁
Turmeric rice, ground beef made with tamari and chili oil, and pickled veg (cabbage, carrots and zucchini).

Sorry everyone! I was pretty sick for a while there. Back up and somewhat functioning though 🤘 experimenting with omelettes! Bacon, hashbrowns, tomato, avocado, turkey, cheese cooked into the egg 🤌 enough for 2!

I call this "The Tragedy", it's a Cuban inspired what was supposed to be cauliflower breakfast waffle but is now just fried cheese ☺️

3 ingredient keto spinach wraps! Not going to lie, it took a few tries 🙃 but this breakfast burrito was worth it!

2 eggs
2 cups of spinach
Salt to taste

Blend together until liquidy.
On medium heat spray or oil your pan, the larger the pan, the larger the wrap.
Pour in mixture, rotate pan around until mixture fully coats the pan and cover with a lid for 2 and half/3 minutes.
Flip to cook the other side and you're done! Super simple, keto, adds more protein to your meal, and it's tasty!

Absurd pierogi burger, turned into a smash burger and lunch for tomorrow, but it was a really fun process!

I was prepping to make a special dinner 👀 and had left over pierogi dough, so I made breakfast pierogies. Crispy potato, bacon, egg and cheese, topped with hollandaise, bacon and parsley 🤘 sit tight for dinner!

I could not the life of me figure out what to make with limited options, but then the light bulb went off! I made mine with left over taco meat and cheese strings. I will definitely be experimenting with more filling ideas and have listed some stuff I thought of for you all to try as well!
