Classic Chicken Francese
Ingredients:
4 boneless, skinless chicken breasts
1/2 cup all-purpose flour
2 large eggs
1/4 cup grated Parmesan cheese
1/4 cup olive oil
4 tablespoons unsalted butter
1 cup chicken broth
1/4 cup fresh lemon juice
1 lemon, thinly sliced
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch. Season both sides with salt and pepper.
Place the flour in a shallow dish. In another shallow dish, beat the eggs and mix in the grated Parmesan cheese.
Dredge each chicken breast in the flour, shaking off any excess, then dip into the egg mixture, coating both sides.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the butter and let it melt over medium heat. Add the chicken broth, and lemon juice, stirring to combine. Bring the mixture to a simmer and cook for 5 minutes, or until the sauce has reduced slightly.
Return the chicken breasts to the skillet, spooning some of the sauce over the top. Arrange the lemon slices in the skillet around the chicken.
Cook for an additional 2-3 minutes, or until the chicken is heated through and the sauce is hot and bubbly.
Serve the chicken Francese hot, garnished with chopped fresh parsley.
