Copycat Olive Garden’s Chicken Gnocchi Soup
To make this delicious soup, you'll need the following ingredients: 1 tablespoon olive oil, 1 cup finely diced onion, 1/2 cup finely diced celery, 1/2 cup finely diced carrot, 2 cloves minced garlic, 1 pound cooked and shredded boneless, skinless chicken breasts, 4 cups chicken broth, 1 teaspoon dried thyme, 1 teaspoon dried parsley, salt and pepper to taste, 1 cup chopped fresh spinach, 16 oz potato gnocchi, 1 cup half-and-half, and 1/2 cup grated Parmesan cheese.
Start by heating the olive oil in a large pot over medium heat. Add the diced onion, celery, and carrot, and cook for 5-7 minutes until the vegetables are softened. Then, add the minced garlic and cook for another 1-2 minutes until fragrant. Pour in the chicken broth and bring the mixture to a simmer. Add the shredded chicken, dried thyme, dried parsley, salt, and pepper, and let it simmer for 10-15 minutes to allow the flavors to meld.
While the soup simmers, cook the potato gnocchi according to the package instructions. Once cooked, drain and set aside. Add the chopped spinach to the pot and stir until it wilts. Then, pour in the half-and-half and add the cooked gnocchi. Simmer for an additional 5-7 minutes. Finally, stir in the grated Parmesan cheese until it melts and combines with the soup.
