Copycat Olive Garden’s Chicken Gnocchi Soup
To make this delicious soup, you'll need the following ingredients: 1 tablespoon olive oil, 1 cup finely diced onion, 1/2 cup finely diced celery, 1/2 cup finely diced carrot, 2 cloves minced garlic, 1 pound cooked and shredded boneless, skinless chicken breasts, 4 cups chicken broth, 1 teaspoon dried thyme, 1 teaspoon dried parsley, salt and pepper to taste, 1 cup chopped fresh spinach, 16 oz potato gnocchi, 1 cup half-and-half, and 1/2 cup grated Parmesan cheese.
Start by heating the olive oil in a large pot over medium heat. Add the diced onion, celery, and carrot, and cook for 5-7 minutes until the vegetables are softened. Then, add the minced garlic and cook for another 1-2 minutes until fragrant. Pour in the chicken broth and bring the mixture to a simmer. Add the shredded chicken, dried thyme, dried parsley, salt, and pepper, and let it simmer for 10-15 minutes to allow the flavors to meld.
While the soup simmers, cook the potato gnocchi according to the package instructions. Once cooked, drain and set aside. Add the chopped spinach to the pot and stir until it wilts. Then, pour in the half-and-half and add the cooked gnocchi. Simmer for an additional 5-7 minutes. Finally, stir in the grated Parmesan cheese until it melts and combines with the soup. Adjust the seasoning to taste, and serve the soup hot, garnished with extra Parmesan cheese if desired. Enjoy this creamy, comforting soup that tastes just like the Olive Garden favorite!

With a house full of growing kids, there's always someone snacking! 😂 To keep things healthy and convenient, I bought 2 and 4 oz. containers from Amazon for $15 (a great investment since we'll reuse them). I filled them with trail mixes, nuts, raisins, and other healthy snacks to create "perfectly portioned" snacks. For about $20 worth of food, I made around 75 servings, and we still have plenty left over!

Preheat your oven to 350°F (175°C). Arrange two cans of Pillsbury cinnamon rolls in a baking dish and pour enough heavy cream to cover the bottom. Mix 1 stick of melted butter with 1/2 cup of brown sugar and pour this mixture over the cinnamon rolls. Bake for 30 minutes or until done. One of my favorite lunches during the fall is Chicken Chili!
To make it, combine 2 pounds of chicken breast, 2 cans of undrained Rotel, 2 cans of undrained corn, 2 cans each of drained and rinsed pinto and black beans, and 1 large chopped onion in a crockpot. Add 2 cups of chicken broth, 2 tablespoons of chili powder, 1 tablespoon of cumin, 2 teaspoons of salt, 1 teaspoon of pepper, and 2 packets of ranch seasoning. Top with 16 ounces of cream cheese (2 bricks). Cook on high for 4 hours or low for 8 hours. When done, shred the chicken and mix it back in. This hearty chili is perfect for a cozy fall meal!

Quick and easy breakfast my kids requested today. This recipe makes them fluffy and delicious!
Use two cans of Pillsbury cinnamon rolls and cover the bottom of a baking dish with heavy cream. Mix together 1 stick of melted butter and 1/2 cup of brown sugar, then pour this mixture over the cinnamon rolls. Bake at 350°F for 30 minutes or until done. When done, spread the icing that came with the cinnamon rolls on top and serve. We also added more cream cheese frosting that we had on hand for extra sweetness.

My husband and I have been competing by making meals with 5 ingredients or less from the Dollar Tree! This week's meals turned out great! We made mushroom and Swiss burgers on garlic bread with crispy crowns, and a delicious carbonara. Both meals cost just $13.75 total!
The first meal included Texas toast, burger patties, Swiss cheese, mushrooms, and crispy crowns. The second meal consisted of egg noodles, 2 whole eggs and 1 yolk, a can of peas, as much Parmesan cheese as you like, and bacon.

Cook 1 pound of ground beef, seasoning it with garlic powder, chopped onion, and Slap Ya Mama, then add taco seasoning. In a large bowl, mix a can of fiesta nacho cheese soup, a can of Rotel, and 2 spoonfuls of sour cream, then add the cooked hamburger. In a baking dish, lay down 2 big burrito-sized flour tortillas and spread about 1/3 of the beef mixture on top. Continue layering until you've used all the mixture, which usually makes 3 layers. Top with 2 more tortillas and cover with shredded cheese. Bake uncovered at 350°F for 20 minutes or until the cheese is melted and bubbly. This yummy dinner pairs perfectly with cheesy Mexican rice. Enjoy!

Our kids had a snow day, so we decided to make some fun meals and made English muffin pizzas. Here's what we used:
English muffins
Pizza sauce
Mozzarella cheese
Your choice of toppings (We used pepperoni)
Instructions:
Preheat the oven to 400°F.
Line a baking sheet with foil and slice the English muffins in half.
Spread pizza sauce on each half, then top with mozzarella cheese and your choice of toppings.
We also sprinkled some Italian seasoning on top for extra flavor.
Bake for 10-12 minutes or until the cheese is melted.
We hadn't made these in a while, and our kids had a blast helping out!

Cheese Crisps
Ingredients:
Sargento Ultra Thin cheese slices (any type of cheese can be used, sliced or grated, but Sargento Ultra Thin works best)
Instructions:
Preheat your oven to 250°F.
Line a large baking sheet with parchment paper.
Separate the cheese slices, removing any paper, and stack them evenly. Cut the stack into four pieces.
Lay the pieces evenly on the parchment paper, ensuring they do not touch.
Bake on the middle rack of the oven for 45 minutes. Baking times may vary depending on the type of cheese; provolone and mozzarella might take longer than Swiss or cheddar, so check every 5 minutes until they are crisp.
Allow the cheese crisps to cool.
Place them on a paper towel to remove excess oil, then transfer them to a serving bowl or plate. Enjoy!

Homemade Salisbury Steak with the Fixin’s
This dish is sure to make my husband happy when he gets home! Here's the recipe:
Mix 1 pound of ground beef in a bowl with breadcrumbs, ketchup, Worcestershire sauce (aka "wash your sister sauce"), and finely chopped onions.
Form the mixture into patties and fry them in a pan with butter and garlic until cooked through. Remove the patties from the pan and set them aside.
Without removing the grease from the pan, add a can of beef gravy, a tablespoon of Dijon mustard, 1/4 cup of beef broth, and cornstarch if the gravy needs thickening. Bring this mixture to a simmer.
Add the beef patties back into the pan and baste them with the gravy until it's thickened. Serve and enjoy!

Yes, I'm joining the crowd and posting about the "TikTok" pasta! I made it with cream cheese instead of feta since I've never tried feta and wasn't sure if I'd like it. Here's how I made it: I used cherry tomatoes and cream cheese, sliced chicken breast, olive oil, Italian seasoning, garlic powder, onion powder, crushed red pepper, salt, and parsley. I baked everything at 400°F for 40 minutes, then mashed it all together and added cooked pasta. Even my 1.5-year-old loved it! 😂
