“As some of you may know, I'm an attorney who specializes in State Liquor Authority ("SLA") matters. Over the years, I have had the good fortune of representing many of our fine dining establishments. As all of you likely know, the restaurant industry as a whole has been decimated by the Covid-19 pandemic.

To make things even a bit more stressful for establishments, is that over the past three months the SLA has gone on an all out assault to assure 100% compliance of the Governor's orders pertaining to restaurants and bars...This is not necessarily a bad thing, as we all want to make certain when we go out to eat that we are in a safe environment.

A recent problem that has been arising more and more, is that the non-compliance by customers has resulted in tremendous fines for these establishments, and in a growing number of cases, suspensions of their liquor licenses altogether.

Just tonight, while eating at a local place, in the span of about 30 minutes I noticed 4 people walk into the place without a mask. Not sure if they were thinking this is still 2019, or they simply forgot, but the SLA would not care why.

When you go out to eat, WEAR YOUR MASK. Keep it on when you sit down, and take it off only once you have started your meal or drink. You are doing that not only for those around you, but also for the proprietor looking to hold on to their business, and the employees looking to hold on to their jobs.

Don't underestimate the probability of an investigator sitting at the next table, or viewing you from just outside. Places that may have been visited by investigators for routine inspections once (or never) in years, are now getting unannounced visits several times a week. You will most likely not even know it, but if they snap a photo of you standing in the place without a mask, the financial hardship you may've just inadvertently caused the owners may not be sustainable for them. My having to assist these clients get through the process is not the kind of work I enjoy getting.

So think of all of those you would negatively affect, and do the right and safe thing. Care.”

Two freshmen from Boston University went from cooking on their desks to cooking with the executive chef at the Four Seasons Restaurant. Now, they’re doing a pop-up!!

The 803 Restaurant is an underground sushi pop-up that these two creative, artsy entrepreneur freshmen from Boston University started in their dorm room, the actual Dorm Room 803, and now works hand-in-hand with the world renowned chef from the Four Seasons, Pecko Zantilaveevan. The freshmen from New York City started their dorm room restaurant simply because the dining hall just didn't cut it. What began as an attempt to eat in and debut their skills with a fun "tasting" exclusively for friends, quickly snowballed into a full-fledged dining experience with customers, consisting of students, professors and general public, commuting from the likes of Harvard, MIT and Boston College, not to mention the Terriers themselves. Due to a combination of their Snapchat Geotags and plethora of satiated coeds, the aspiring chef: Jarrett Deutsch and the passionate foodie: Ethan Cole, began working with a single electric burner, blender, crock pot, and blowtorch (similar to that which we use for creme brulees), the two were able to serve their eclectic omakase experience to 32+ clientele per evening. Hence, the cubicle-like restaurant of four seats treated an always booked eight turns, whenever it could run in between classes. Once they were featured in the Boston Globe, they returned home to New York City to link up with the revered Zantilaveevan, and have been doing an array of their own pop-up events, private functions and catering, in New York City and the Hamptons.

The 803 begins its 3 day pop-up restaurant commencing this Thursday, August 17th to Saturday, August 19th. Jarrett, Ethan and Pecko invite you to join them for either of their spectacular Omakase Sushi Dining Experience options priced at $95 and $125, or our lunch menus of $45 and $60.

French Onion & Summer Truffle Soup: Caramelize 15-16 Finely sliced thin Maui onions & several bunches of scallions; Simmer low, throw in 2 tsp of golden cane sugar, 1 tsp of kosher salt, 1 tsp of fresh grated black pepper. 2 cups of freshly homemade beef broth. 1 bottle of white wine. Simmer low 30 min. Toss in sautéed slivered white summer truffles. Put into an oven safe bowl. Fill ¾ full, put a slice of French bread & slices of Gruyere Cheese. Bake for 25 minutes at 375. Drizzle with 1/2 tsp of hot Japanese sake heated in that butter you just sautéed those truffles. Oh Janette Behave!
