Meal Prep Monday with Cartwright's Market features Protein Pancakes that are flourless!! They're also only made with FOUR ingredients!!! You can of course add in whatever you'd like to spice up your pancake, but it isn't necessary. This is a great way to get in more protein without all the extra gunk. These freeze well and are super easy for a grab and go treat!

Meal Prep Monday with Cartwright's Market features Pulled Pork made in the Instant Pot! Perfect idea to make sliders for the upcoming big game on Sunday!! I paired the pulled pork with a mayo-free coleslaw and sugar free baked beans, absolutely delicious! I even used a Hawaiian BBQ sauce and would definitely do that again - great flavor! This is a SUPER easy recipe - especially for someone who's literally never made pulled pork before. 😅

The City of Grants Pass is responding to a waterline failure on SW G Street in the vicinity of Westholm Avenue. Due to icy conditions, city crews will be closing SW G between Westholm and Western avenues while repairs are taking place. Time on re-opening the road is still to be determined. Meal Prep Monday with Cartwright's Market features Samoa Cookie Protein Bars! Think Girl Scout cookies, but a little healthier, with added protein and no baking required!! I was shocked at how yummy these are! They freeze great - if you somehow can't eat them all. I will say, they're extremely addicting.

Meal Prep Monday with Cartwright's Market features Stir Fry - a healthier version!!! I made this using ground elk venison but you can use any kind of ground meat. You can also add 1/3 cup of orange juice to the sauce if that's your jam - I'm out on citrus, but I found the sauce to be delicious without it!

This meal is super easy to make and would also freeze well if you wanted to prep ahead!
