This week I got the opportunity to sell some sample products at our Marketplace! I was a nervous wreck but was so thankful to the love and support. A humble beginning for sure, but you have to start somewhere! Mr. Ed thoroughly approved if this morningā€™s smoothie. Copycat Chia Banana Boost recipe from
Iā€™ve literally made this almost everyday for two weeks! Itā€™s soooo good.
1 cup almond milk
1/4 cup oats
1 roasted banana
2 Tbs shredded coconut
1 Tbs chia seeds
2 Tbs chopped almonds
1/2 teaspoon ground cinnamon #
2 Tbs peanut butter
2-3 pitted dates, chopped
1 1/4 cup ice
Maple syrup or honey to taste

Blend and enjoy. Feel free to use milk of your choice, or swap the peanut butter for some crunchy peanut butter or frozen/fresh fruit like strawberry.

The boys and I stopped by one of our favorite spots for donuts: Margeā€™s. Marge even gave Carter an extra donut which he gladly accepted. Thanks to the lovely Wilma for helping this mama walk our donuts to the car! šŸ„° We stuffed our faces on the way home, but some of us get a little messier than others. Cousins sleepover was exhausting, but so much fun! We made English Muffin Pizzas and Sā€™mores (in addition to all the snacks). & stuck around just long enough to eat all my Taco Dip šŸ˜© and tried to burn my kitchen down, but the kids had minimal issues, lol. Ended the evening with movies and hit the pool the next day. Kiddos grow up so fast so be sure to enjoy the family time you have šŸ˜

Sheet pan chicken with sweet potatoes, beets (yes, beets are delicious!), onions, and peppers. Sorry I let you down šŸ˜” Maybe next week. But this was good šŸ˜‹

4 Chicken Legs (or you preference)
2 medium Sweet Potatoes, large dice (or regular potatoes)
2 medium Red Onions, large diced
3 large beets, large diced
1 large Yellow Pepper, large diced
drizzle of Olive Oil
Salt & Pepper

Marinade
3 tbsp Olive Oil
1 tbsp Honey
1 tbsp Lime Juice (can sub lemon)
1 tbsp Smoked Paprika
2 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Salt
1/2 tsp Cayenne Pepper (more or less to taste)
1/2 tsp Black Pepper

Preheat oven to 415 F.
In a small bowl combine paprika, garlic powder, onion powder, salt, cayenne pepper, black pepper, olive oil, honey and lime juice. If marinade seem to thick, and a little olive oil until desired consistency is reached.
Combine in a large bowl with chicken legs. Cover and let marinate at least 30 minutes (2-24 hours ideal)
Remove chicken and place on sheet pan or baking/roasting dish. Add sweet potato, peppers, beets, and onions to the bowl with leftover marinade (you can also reserve about 1 tbsp of the marinade and toss veggies in this if concerned about contamination). Add a drizzle of oil and pinch of salt and pepper and thoroughly mix.

Place veggies on tray around chicken. Place in oven and bake, basting the chicken with its juices every 10-15minutes, for about 45 minutes or until juices run clear and (internal temp for chicken 165F). If using smaller chicken parts, you may need to reduce cooking time or oven temperature slightly. The marinade and cooking temp will help produce a nice char on the chicken.

After a long week, a nice refreshing cocktail is just what we needed. This blended drink is made with fresh pineapple but feel free to substitute frozen if that all you have:

1 ripe pineapple, peeled and cored
1 1/2 cup rum
1/2 cup agave nectar (optional but adds sweetness)
1/4 cup lime juice
2 cups ices
1 liter ginger ale

Blend all ingredients except ginger ale. Pour into pitcher and give a nice stir. Add ginger ale, stir and serve.

It took me so long to get my hands on a bag of flour during these crazy times that Iā€™m just now joining the baking frenzy. I skipped yesterday, so these black bean tacos are a perfect way to balance the week and not miss . This is another really easy recipe that goes a LONG way so itā€™s great for families or having leftovers for later in the week. The beans are even better the next day so you can also make them ahead of time.

2 cans black beans, drained and rinsed (about 2 cups)
1 cup of your favorite salsa
1 Ā½ tsp chili powder
1 tsp ground cumin
Salt and pepper to taste

Avocado Cilantro Crema:
Ā½ avocado
Ā½ cup plain Greek yogurt (or sour cream)
1 cup fresh cilantro
1Tbs lime juice (more if youā€™re feeling real zesty!)
1 clove garlic, crushed and minced
8 tortillas (I prefer corn but flour would still be tasty)
Additional taco topping of your choice

In pot over medium heat, combine beans, salsa and spices. Simmer 5-10 minutes, stirring every few minutes. If the beans get mashed or mushy itā€™s okay and up to your preference.
While beans cook, blend avocado, yogurt (or sour cream), cilantro, lime juice, and garlic in a food processor until cilantro is incorporated fully. (This took about 3 or 4 minutes of blending in my little struggle processor, lol.) Add salt and pepper to taste and more lime juice if needed.
When beans and your avocado cream are ready, assemble tacos on shells.

Does breakfast ever just get old to you? I sometimes get tired of the same breakfast over and over again. This breakfast pizza is a way to at least throw a different ā€œspinā€ on the typical breakfast ingredients. The great thing about a breakfast pizza is you can top it with whatever youā€™d like. Since this was my first time, I kept it simple with eggs, bacon, and cheese. I found I prefer to mix the sausage gravy with the marinara, because I get the best of both worlds. This recipe is super flexible and forgiving so adjust things to your familyā€™s taste. Iā€™m looking forward to trying different combinations in the future.

14 inch Pizza Crust (store bought or make your own)
1 tablespoon of olive oil
Ā½ cup Marinara Sauce
Ā½ cup Sausage Gravy
3-4 large eggs, scrambled (I scramble them soft/runny because theyā€™ll cook more in the oven)
5-6 slices of bacon, diced and cooked
Ā½ cups mozzarella cheese
Ā½ cup cheddar cheese

Preheat oven to 450 degrees F. (If you havenā€™t already cooked eggs and bacon, use your preheating time to do so).
Brush Pizza crust with olive oil, then cover with desired amount of marinara and/or sausage gravy (I did one pizza half and half and the other with the marinara and sausage gravy mixed. Itā€™s all about preference.)
Add scrambled eggs and bacon, then top with your desired amount of cheese.
Bake for about 8-10 Minutes until cheese it melty and edges of pizza are golden.

When I was pregnant and preparing for my son, putting together a library with books featuring kids like him was a priority because I wanted him to see someone like himself in his stories. We also have books with characters that donā€™t look like him.

To my non-black friends with littles trying to figure out how to personally make changes for a better tomorrow, think about the images your children see. Is your childā€™s library reflective of the larger society? Do you provide them with the opportunity to see positive images of people of color on a regular basis? If not, Iā€™d challenge you to find books that feature little black and brown kiddos and add them to your libraries. When reading the stories, ask them age appropriate questions about race and their interactions with people outside their race. Help them learn to respect and appreciate other races.

Here are a couple of my sonā€™s faves (heā€™s 13 months).

ā€œJoshuaā€™s Night Whispersā€ by Angela Johnson is in his top two favorites because itā€™s an easy read for a 13 month old and is perfect for bedtime.

The Leo series by Anna McQuinn. While not a black author, we both love this series (his sister Lola has one too šŸ˜Š) because it talks about the real life activities in babies lives.

ā€œFull, Full, Full of Loveā€ by Trish Cooke

I am one of those people who hate eating chicken without some type of sauce. So this Creamy Chicken & Spinach recipe was a winner for me. My guys loved it and after I so lovingly deconstructed the meal for baby, he flipped his plate over and mixed it up šŸ˜«.

2lbs Chicken Thighs (you can use breasts as well)
1 onion diced
2 Tbs olive oil
1/2 tsp Red pepper flakes (optional)
1 cup roasted red peppers
1 tsp cumin
1/4 chili powder (adds more flavor than heat)
1 cup half and half
4 cups spinach
3/4 cups Parmesan Cheese
salt and pepper

1) Heat olive oil in skillet on medium high heat. Sprinkle chicken with salt and pepper on both sides then place in skillet. Allow to brown on both sides, about 3 minutes per side, reduce heat to medium and cook until juices run clear. Remove from pan
2) In same skillet, add diced onions and red pepper flakes and sautƩ until onions are softened.
3) Add roasted peppers, cumin, chili powder, a pinch of salt and half and half and allow to simmer on medium low heat for about 2 minutes.
4) Add spinach and cheese to skillet and mix to incorporate. When sauce begins to simmer, add chicken back to pan. Let simmer for about 5 - 8 minutes while pouring sauce over top of chicken. Remove from heat.
šŸ˜Ž Serve with pasta, potatoes or side of your choosing.

In the battle between Little Bear and Breakfast, I kind of feel like breakfast won. While allowing my son to feed himself definitely gets messy more times than not, I enjoy letting him explore his food and learn how to feed himself. Itā€™s really helped with his motor skills and makes it easier for me to be able to eat along with him. A quick rinse in the bath and we were ready for the day šŸ˜‚

Anyone else going to be pigging out on hot dogs and burgers for the next few days? I figured Iā€™d kick off weekend with a healthy lunch of grilled salmon with Quinoa Tabbouleh Salad before things go downhill.
Quinoa Salad:
1 cup cooked Quinoa
1/2 cup diced cucumber
1/2 cup diced tomatoes šŸ…
1 cup chopped parsley
2 Tbs chopped mint
1 Tbs olive oil
1 Tbs lemon juice or more for taste
Pinch of salt
1/4 cup crumbled feta (I forgot to add šŸ˜©)

Combine all ingredients in bowl and toss with lemon juice and olive oil. Serve with grilled salmon. And yes, I feed little guy the same thing. The salad got messy, but I love introducing him to new foods and flavors.

Itā€™s 5 oā€™clock somewhere! Afternoon round of drinks for mama and papa bear features the easy breezy Tequila Sunrise:

2oz Blanco Tequila
4oz Orange Juice (I used Orange Pineapple šŸ˜œ)
Grenadine

Chill glasses or use ice. Pour tequila into glass, add orange juice. Slowly drizzle grenadine into glass. Garnish and enjoy!
