For all you cottage cheese fans out there! So many have messaged, & yes, I 💯 agree that @longley_farm is the best there is. I know of just x3 stockists here in Bristol. Glad to see @mob is also flying the cottage cheese flag, I can remember when this stuff was 65p & I used to get £1 for my school dinner money & would jump the gate at high school, buy a tub of this & eat this for my lunch. There is a caveat here, an authentic Greek spanakopita would not have cottage cheese, or cheddar or parmesan for that matter, but it would have feta, or similar curd cheese to cottage cheese, sometimes multiple sorts, so I say, go for it, this is a spinach & cheese pie & over the years I’ve made it with loads of different cheeses (ricotta too 🇮🇹 🇬🇷), different greens too (chard, broccoli & various, it’s then called Hortopita in Greece)…. for perfect crispy pie, you will need liberal lashings of butter (tho’ I’ve also used ghee 🇪🇬🇮🇳🇧🇩🇵🇰 in my filo pies over the years)
My top tip, & again, can’t vouch for authenticity but can vouch for ease & thrift, buy a big bag of frozen spinach, defrost over a sieve, squeeze as much liquid as you can out of this & this makes a brilliant spanakopita filling. As you can see I got a mixture of herbs here, fennel fronds, parsley, mint, oregano & marjoram & I also added dried mint, cinnamon & cumin in the mix too.
A couple of eggs too.
I always go big on my spanakopita, because there is a fight in the morning who gets the remaining for their lunchboxes, so good as it is cold the next day too.

With summer finally & thankfully here, we love nothing better than making pizza, the best weekend activity. If you ask me “what is your favourite pizza topping?” I will - hand on heart - answer you this; “a white pizza, & make it just like this one w/ delicious seasonal Jersey Royals.” @jerseyroyals are exclusively grown on the island of Jersey, where the combination of soil, sea air & skilled practices of generations of Jersey farmers result in a truly unique new potato with flaky skins, nutty flavour & creamy consistency.
I’ve thinly sliced a load of delicious Jersey Royal potatoes & given these a quick blast in the oven on a tray with salt & olive oil, with the Jersey Royals just tender, but not coloured, whip them out of the oven & get busy with the pizza topping. I’ve used a good quality sausage squeezed from skin, sage leaves, olive oil, pinch of dried chilli then showered the pizza base with a good amount of the just cooked Jersey Royals. In the hot pizza oven (though quite honestly, a hot oven indoors will also do a good job with this, my failsafe pizza dough) the Jersey Royals buckle & blister in the heat as the base cooks & all that’s needed is a generous blizzard of parmesan & more olive oil when the pizza slides from oven to plate.
Jersey Royals are a seasonal delight, & I never take them for granted, they are delicious boiled & dressed with some salt and too much butter, but if you have a family of pizza addicts, this recipe is a lifesaver.
500g strong white bread flour
7g dried yeast
½ tsp salt
Olive oil for oiling your hands & surface for initial knead
330 - 350ml water
500g jersey royals, skin on & scrubbed
3 - 4 sausages, nice garlic-y sausages with a high meat content with little or no rusk, skin removed & squeezed from casings
12 sage leaves
Salt & black pepper, to taste
Good olive oil
Freshly grated Parmesan, lots!
Chilli flakes, to taste

From Sicily, the garden here @annatascalanza is teaming with courgettes. Kyle is the chef here at the cookery school, he runs the cooking courses & is a brilliant cook. For dinner last night, the ladies in the kitchen made involtini which compromised of thinly sliced beef wrapped in onions & bay leaves, it was delicious, but got me thinking. Kyle & I came up with this version in the kitchen this afternoon, so delicious & pleased to show you how in this reel if you want to recreate these from your home kitchens. This is what we did;
Thinly sliced firm courgettes, not too spongy, these were nice & compact, marinade the slices in fresh herbs, lemon zest, salt, bit of minced garlic & olive oil. Slice tuma (or halloumi) cheese into cubes, wrap the cheese in the courgettes, then skewer with slices of bread, as you might for a kebab. Drizzle with olive oil & bake in hot hot oven until courgettes are softened & bread is crisp. Remove from oven, squeeze over with lemon juice, lots of chopped fresh mint, some grated pecorino or use parmesan & and drizzle more olive oil.
Kyle said involtini was anything wrapped to cook, so can also inc. fish, by wrapping the cheese in the courgette these are vegetarian involtini.
No music in this reel because the 🐔 is a perfect Sicilian soundtrack.

Thanks to Giovanna in the kitchen @annatascalanza for the inspiration behind this inventive way with courgettes, so very tasty! And these, after all, were made with bog standard supermarket courgettes (choose the smallest, firmest sort), not even with those gorgeous pale striped courgettes grown & picked in the garden out in Sicily. Anyway, here’s the thing, this recipe makes even those slightly boring supermarket courgettes turbo charged. I cooked these for Sunday lunch yesterday, along with some baked polenta & that meatball recipe of mine which is over on @mob (sign up is in the link in my bio, today is the last day of their sale)
Enough small firm courgettes, sliced 1/2 cm coins
4 tbsp fresh breadcrumbs
3 tbsp grated pecorino or use Parmesan, plus extra to serve
Olive oil, enough
1 tbsp dried oregano
Pinch of chilli flakes, to taste
Salt & pepper, to taste
Lemon juice, to taste
Mix everything in a bowl, minus lemon juice. Thread onto skewers. Roast in hot oven 210C until softened & burnished, I also gave mine a quick flash under very hot grill to give extra colour / crunch to the breadcrumbs. Remove from oven & squeeze over with lemon juice, and extra olive oil to serve.
Threading the courgettes on the skewer creates space for hot air to circulate courgettes, intensifying flavours, in a good way.
I could probably live in Sicily & cook vegetables differently for 365 days a year & never ever get bored 🇮🇹

Have made this for many, many years now, and this particular version took me 13 minutes to assemble & 25 minutes to bake yesterday, it really is a doddle. Use any seasonal fruit you like, or use dried fruit in the middle layer, add different seeds, nuts, flours, spices, it’s fairly foolproof. The best thing about this recipe, whilst very delicious to eat there & then, it’s almost better the next day after it’s been made to hold as a square for packed lunches…. This recipe has sugar, and honey, but over the years I’ve whittled away at the sugar content & find this amount keeps the oats, fruit & flour intact, but isn’t overly sweet.
Strawberry & Coconut Slice
Made x9 squares
180g oats
180g self raising flour
100g butter
100g soft brown sugar
2 tbsp runny honey
1/2 tsp bicarbonate soda
Around 15 strawberries, hulled & sliced
3 tbsp coconut flakes
Melt sugar, butter & honey together. Mix flour, oats & bicarb together in a bowl. Add butter mix. Mix well. Press 2/3 of this into lined tin, mine measured 20x20 cm. Add strawbs & coconut flakes. Crumble over remaining 1/3 of flapjack mix. Bake in hot oven at 180C for 25 mins until crisp & golden. Cool in tin before chopping into squares. Will easily keep for up to 4 days in a tin, but really, will it???

I love this recipe, from my very first book The 5 O’ Clock Apron, by boiling the courgettes whole, then squashing them, you keep the flavour of the courgettes, but cook them soft enough to chop up as I do here. These are all flavours that go beautifully together, tahini, olive oil, raw garlic & lemon juice, all beaten together until creamy then dressed with more olive oil, chilli flakes, sumac, chopped coriander & toasted seeds & nuts to serve as a cold / room temp. mezze dish. You can spot my teenage daughter eating this for breakfast, but with my mum here for the night, I’m sending her off on the train today with this in a roll + some feta for a train picnic.
3 medium / firm courgettes
1 garlic, grated / minced
Juice of lemon, to taste
3 tbsp olive oil, plus extra to dress
2 tbsp good tahini, more or less to taste
Turkish chilli flakes, to taste, I used urfa
Sumac, to taste
Salt, to taste
Toasted seeds & nuts, I used a sort of dukkah mix, use anything, walnuts would be good here too
Chopped coriander
Boil the courgettes in well salted water until easily pierced with a skewer, around 15 mins. Drain & squash the cooked courgettes over a colander for at least 30 mins with something very heavy. Discard the water. Chop the courgettes on a board, or blitz, then add the ingredients listed & dress the dish as I do in the reel with the additional ingredients.

Romesco Recipe ♥️
1 large slice of rustic bread, toasted with a drizzle of olive oil
150g roasted jarred peppers
40g toasted almonds or walnuts, + extra to serve
1 clove garlic
1 - 2 tsp sherry vinegar
1/2 tsp smoked or unsmoked paprika
Pinch of chilli flakes
4 tbsp olive oil
Process the sauce as I do in reel, season to taste with salt and pepper, add thin & steady stream of water, & more vinegar as you like,

I bought this box of apricots for 6 quid. Chopped & weighed, the fruit came in at 3Kg. Use equal sugar. I used 4 sprigs of culinary lavender. Mix chopped fruit with sugar & lavender. The trick to really good jam, by which I mean tasting of fruit & not too syrupy sweet is to bring the pan to a rapid boil as quickly as you can & to boil it hard in as little time as possible until you get to 105C… by making jam like this you’re keeping that fresh fruit flavour, it’s not been bubbling away for hours & hours, you can taste the fruit, which is what we want. Use a big wide pan to get the bubble going in as short as time possible. Boil it hard for 1 more minute when you get to a uniform 105C in the pan. You’ll see different parts of the jam pan record different temps, so be attentive to this. Store in sterilised jars. It will last forever, but will it really? 🍑🪻
A spoon of this with some thick Greek yogurt is puddings sorted for the next 6 months 🤸🏻♀️
