Nothing better than an after Christmas $6 turkey grilled on a sunny March day!🦃☀️☀️
13# turkey thawed for a few days in the fridge. Spatchcocked and dried off thoroughly. Pats of butter underneath the skin and seasoned with @neilsarap SGPR and Bayou Cajun for a little kick and beautiful color.
Grilled indirect on my @biggreenegg over @thegoodcharcoal and a couple chunks of applewood. I used my MEATER Pro Duo to monitor both the Breast and the leg. Final temps were 170° in the breast and 190° in the leg.
Rested for maximum juiciness.😍
Grilled at 300° for about 3 hours then bumped up the temp to 375° for another 30 to get that skin nice and crispy.

Here’s a fun take on the Reuben, make it a casserole!🍀 I’ve seen this before and decided to give it a try.
I made a small one, just double it for a 9x13 size.
4 slices rye bread, toasted & cubed
1 cup sauerkraut, drained
Thousand Island dressing, to taste
2 cups cooked corned beef, cubed
8 slices Swiss cheese
Caraway seed & parsley, optional
Spray 8x8 casserole with nonstick spray. Lay down 1/2 of the rye bread cubes, then follow with 1/2 of the dressing, sauerkraut, corned beef, caraway seed if using and Swiss cheese.
**Repeat**
Top with the remaining bread cubes. Sprinkle with parsley if desired.
Cover and bake at 350° for 20 minutes. Uncover and bake for 10 more minutes, making sure it’s heated through and melty.
While this was definitely delicious since I’m a Reuben fan, it really just made me want the sandwich!😂🍀

Simple and tasty pepperoni & mozzarella rolled chicken breasts. And when there’s Parmesan involved, I don’t miss breading a bit!!😍
Breasts butterflied, pounded and brushed with @fustinis Garlic Olive Oil. Seasoned with @neilsarap Italia Blast. Filled with pepperoni & mozzarella. Rolled up, placed in a casserole and topped with plenty of shaved Parmesan and more Italia Blast.
Baked covered at 350° for 30 minutes then uncovered until chicken was 165° and cheese was melted.

This Chicken Pot Pie happened after seeing I had one lonely frozen pie crust in the freezer. Only one crust? No problem. I had a few sheets of phyllo dough that I halved and brushed with @fustinis Butter Olive Oil (perfect for phyllo!!). I scrunched them up and set them on top of the pie. Voila!!
Here’s my filling:
3 boneless chicken thighs, seasoned with @neilsarap SGPR, roasted then chopped. Set aside.
6 tablespoons butter
1 large carrot, chopped
1 small onion chopped
1 teaspoon minced garlic
6 tablespoons flour
2 1/2 cups chicken broth
1/4 cup milk
Pinch of thyme
Pinch of celery salt (I was out of celery)
Pepper to taste
@knorr Chicken Bouillon to taste.
Simmer carrot and onion in butter until carrot is tender. Add garlic, simmer until fragrant. Turn up heat to medium and whisk in the flour. Cook for a couple minutes while stirring. Whisk in chicken broth until thickened. Stir in the milk. Add thyme, celery salt and pepper. I added the chicken bouillon after taste testing 😁. Fold in the chopped chicken thighs. Let it all cool down before pouring into the pie crust.
After topping with the phyllo bundles, I sprinkled on dried parsley and baked this for about 50 minutes @350°.
We loved it!! Definitely my husband’s jam😂!
