Back to school is almost here!!! I don’t know about you, but I’m a total planner and I already know what I’m having for lunch the first week of school 🤪🤪
Below is the recipe for my lunch!!
Burger ingredients:
1 lb ground turkey
1 cup diced onion
1 cup chopped spinach
1 cup crumbled feta
Seasonings: LOTS of garlic, oregano, salt, pepper, chili flakes (literally whatever seasoning or fresh herbs you have.. add it in!!)
Use your hands to mix the burger ingredients together and form into burger shapes. Spray your grill with avocado oil and grill at 450 for 15 minutes, flipping halfway through OR cook in a pan with avocado oil for 15 minutes, flipping halfway through.
To make the sweet potato fries, I peeled and cut 2 sweet potatoes. Then, I mixed them with avocado oil, salt, and pepper. I baked them on parchment paper at 400 for 30 minutes, flipping halfway through.

Tasty Eggplant spread!!! 🍆🍅
Ingredients:
1 eggplant
1 lb cherry tomatoes
3 cloves garlic
Fresh basil
Salt, pepper, red pepper flakes
Olive oil
optional: 2 tbsp red pepper spread or 2 tbsp water
1. Cut your eggplant and roast or sauté it. If roasting, bake at 400 for 15 minutes.
2. Add garlic to the pan and olive oil. Add in the tomatoes. When the tomatoes begin to soften, press your spatula down to rush them. Add your seasonings and fresh basil.
3. Serve over toasted ciabatta or with veggies!

Easy balanced dinner!!!
Ingredients:
Pasta
Broccoli (+ olive oil, garlic, and salt)
Lemon herb chicken (+ olive oil, lemon, & herbs)
Parmesan
1. Marinate the chicken by adding it to a plastic bag with olive oil, juice of a whole lemon, and lots of herbs (I used basil, rosemary, and oregano). Let it sit for at least 30 min or overnight.
2. Cook chicken in a pan with oil for 4 min each side on medium high heat.
3. Drizzle olive oil, fresh garlic, and salt over broccoli. Bake at 425 for 25 minutes.
4. Make pasta and save 1/4 cup pasta water for the end.
5. Combine all ingredients and add more olive oil and fresh parm. Serve and enjoy!!!

1. Boil water
2. Once eggs are boiling, add the eggs and cook in boiling water for 8 minutes
3. Then, drain the pot and fill it with ice. Let the eggs sit in ice for at least 5 min, then transfer to the refrigerator! Eggs will stay fresh for a week:)

15 MINUTE BANG BANG SHRIMP BOWLS (a family favorite recipe)🍤🎇
Ingredients:
Raw shrimp
Seasonings: garlic powder & paprika
Cornstarch
Avocado oil
Sauce—
Sweet chili sauce
Mayo
Siracha
Optional for serving: rice, cucumbers, and carrots
1. Defrost your frozen raw shrimp by adding the shrimp to a bowl of cold water. Once the shrimp is defrosted, peel and pat the shrimp dry
2. Add seasonings (garlic powder & paprika) and corn starch to shrimp
3. Heat a pan with avocado oil and once hot, add the shrimp. Let it cook for 3 minutes on each side on high heat
4. While the shrimp is cooking, combine 1 cup Mayo, 1/4 cup sweet chili sauce, and 2 tablespoons of siracha in a bowl. I end up adding an extra tablespoon of siracha, but taste it first!!
5. Combine shrimp with bang bang sauce and enjoy!!!😋😋

Healthier oven baked crispy chicken parm!!! Paired with some garlicky broccoli and pesto zoooodles :) A perfect dinner if you ask me!!! Hehe so yummmmy and comes together in under 30 minutes!
Chicken parm ingredients:
Thin chicken cutlets (or breasts sliced in half longwise & pounded)
Melted butter or olive oil
Bread crumbs
Parm
Italian seasoning
Tomato sauce (I use arrabbiata)
Mozzarella
Broccoli ingredients:
Broccoli florets
Garlic, chopped
Garlic powder
Olive oil
Salt
1. Pound your chicken and lather with melted butter or olive oil.
2. Make a bread crumb mixture by combining breadcrumbs, parm, and Italian seasoning. Dip your chicken in the bread crumb mixture and lay on parchment paper. Spray with oil and bake at 425 for 25 minutes. I like to flip the chicken halfway through :) *put the broccoli in with the chicken because it also cooks at 425 for 25 minutes!*
3. Cover with tomato sauce and mozzarella. Then, garnish with Italian seasoning and broil until the cheese melts. I broiled for about 3 minutes :)
