Many cool tricks can be used to get a full, "finished" sound on acoustic albums. Doubling of guitars and vocals. Multiband compression to ensure that guitars are full and thick and not too "crispy." And finally...use of multiple mics, eqs, and compressors on the vocalist to ensure that the vocal is big and full.
It is very hard to get the "right" sound with just acoustic and vocal...and one can drive themselves crazy trying.
