Tex-mex chicken bowls 🌮🥙🌶️Serving: 2 people Ingredients:1 tomato 1 onion 1 lime 1 long green pepper 1/2 cup rice of choice3 tbsp sour cream2 tbsp taco seasoning10 oz dices chicken 1 tbsp tex-mex paste (or combine bbq sauce and hot sauce)1/4 cup Monterey jack cheese Directions: 1. Wash and dry produce 2. Dice tomato 3. Halve, peel, and thinly slice onion (mince about 2-3 tbsp for pick de gallo) 4. Dice green pepper 5. Slice lime into quarters 6. Cook rice (3/4 cup water, bring to a boil then simmer for 15-18 minutes) 7. Combine diced onion and tomato in small bowl and squeeze half of lime on top. Dash of salt and pepper. 8. Add 1 tbsp taco seasoning with 3 tbsp of sour cream in small bowl, stir. 9. Cook veggies in pan on medium-high heat with 2 tsp of olive oil and seg to side. Set to side. 10. Cook diced chicken in remaining oil. Add tex-mix paste and 1 tbsp taco seasoning. Cook until brown. 11. Add a bed of rice to plate, top with chicken, veggies, cheese, pico de gallo, and crema (sour cream mixture) and serve with lime wedge. About 550 calories per serving
