crispy sesame salmon bites 🔥

✨ingredients
▫️1lb salmon fillet, skin removed + cut into cubes
▫️season with 1/2 tsp garlic powder + 1/4 tsp ground ginger + kosher / coarse sea salt + black pepper (to taste)

✨sauce:
whisk together
▫️1/4 cup coconut aminos (can also sub with gluten-free tamari or low-sodium sauce if you’re not gluten-free)
▫️3 tbsp honey, maple syrup or preferred sticky liquid sweetener
▫️1 tsp toasted sesame oil (adds a hint of nuttiness - can omit if preferred or sub with 1/2 tsp tahini or even 1/4 tsp creamy almond butter)
▫️1-2 tsp Sriracha , or preferred hot sauce, to taste or omit if sensitive to spice
▫️1 tsp rice wine vinegar or 1/2 tsp apple cider vinegar

✨marinate salmon for 20 mins.

✨air fry at 390F 6-8 mins (or until crispy + golden shaking / flipping halfway through)
OR
▫️bake on lined baking sheet in oven at 415F 10-12 mins (or until crispy + golden flipping halfway through)

✨serve over:
▫️ cooked Jasmine rice, cauliflower rice (for Whole30), hearts of palm rice or preferred rice of choice
▫️sliced avocado
▫️shelled heated edamame
▫️sliced cucumber
▫️shredded / grated carrots
✨garnish: green onions + sesame seeds

All you need is:
Chicken breasts
Bell pepper
Jalapeño
Zucchini
Onion
Minced garlic
Garlic powder
Onion powder
Chili flakes
Salt & pepper
Coconut aminos
Tamari (or you can use soy sauce)
Sesame oil

Easy & HEALTHY what’s not to love!? 🥰

Ingredients:
Thin slice chicken breast
Seasoned with:
Paprika
Garlic powder
Onion powder
Italian seasoning

For the Roasted Corn & Avocado salad:
1/2 cup corn
1 cubed avocado
1/2 chopped tomato
1/2 minced red onion
1 lime squeezed
Salt to taste
Minced cilantro

I served it with 1/2 cup of rice, 1 slice thin chicken breast, 1/2 cup of salad and some love 😉

Notes: season both side of the chicken breast. Using a grill pan & some avocado spray cook chicken (medium heat) about 3-4 min per side. In a small pan with avocado spray roast the corn kernels for about 7-8 min until a nice char forms (this step is optional). Remove from the pan and set aside. In a large bowl add all ingredients for the salad including the roasted corn and mix.

HIGHER PROTEIN EGG SALAD 💪 by

Ingredients:
8 hard boiled eggs
1 1/2 cup cottage cheese
2 tbsp Dijon
1 lemon (juiced)
1 tsp smoked paprika
1/2 tbsp garlic powder
1/4 cup chopped chives
Salt and pepper to taste

Instructions:
In a large bowl grate your hard-boiled eggs using a box grater. Add in remaining ingredients and mix well. Makes 5-6 servings. Store in the fridge for up to five days. .
