@home.chef.vikki | 1st Apple Pie of this season! ๐๐ฅง No big deal, but #apple is the superior flavor of the Fall ๐ (sorry, not sorry, pumpkin or pumpkin spice fans lol)...
I've been baking this memorized recipe since 4th grade. And I usually do a different twist or change every other time. I always use #GrannySmith Apples because they hold their tart flavor better and balance the brown sugar and spices the best, in my opinion. I prefer my pies more tart.
Fall is my favorite season, and I'm so glad it's here โฅ๏ธ

Follow โก๏ธ Home Chef Vikki LUMPIA ๐ต๐ญ Annual tradition rolling #LUMPIA for the holiday season ๐๐ They're Filipino egg rolls, rolled by hand.
The filling is meat-based (more meat!!!). It's a mix of ground pork, ground beef, egg, finely chopped: garlic, onion, carrots, celery, and Mama Sita's lumpia shanghai spice mix packets.
The egg seal is just whisked egg. Some may prefer to mix a little water, corn starch, flour, and/or milk in their egg seal. Honestly, I just use egg.
Roll 'em tight, seal 'em up, trim, deep fry in vegetable oil, and serve hot and crunchy with my favorites Mang Tomas Lechon Sauce or Jufran Banana Sauce, and/or your favorite duck sauce or sweet and sour sauce.

Home Chef Vikki: Pork Rib Sinigang ๐ต๐ญ
I have been eating this lovely recipe of my mom's since forever! And it only took her over two decades before telling me what her secret ingredient was to balance the sour tang of the broth (I started cooking independently on the stove at age 7). Sinigang is a staple of Filipino cuisine, and must be served over piping hot white rice!
My Ingredients:
- Steamed sweet potato (diced)
- Tomato (sliced)
- Black pepper (a sprinkle)

Been a minute! I'm back for the #HolidaySeason! I've been so busy! But with #Thanksgiving around the corner, here's my #Homemade #ApplePie that I've been making and baking since 4th grade!
I prefer baking #Macintosh #apples, freshly picked from my hometown's upstate orchard, and some "secrets" of my pie filling include using ambrosia #honey and #applebutter ๐
Preheat the oven to 425 degrees Farenheit and bake for about 1 hour 10 minutes (always check it early).
My pie filling spice includes: brown sugar, sugar, baking powder, flour, cinnamon, nutmeg, salt, and lemon. I coat the top crust with some milk and cinnamon.
Serve warm with #coolwhip or vanilla icecream! Enjoy!

#TGIF! What's for #dinner tonight?! CHICKEN ALFREDO ZOODLES with SMASHED POTATOES!
Home Chef Vikki
You'll need:
- 3 large fresh zucchini
- 4 chicken thighs (bone removed) or 2 or 3 chicken breasts (your choice)
- potato peeler
- baby red and yellow potatoes
- 1 ir 2 garlic cloves
- butter
- garlic salt
- black pepper
- paprika
- ginger spice
- basil spice
- cast iron skillet
- oven
- tongs, spoons
- peas or asparagus (for another side)
- few tbsp of olive oil
- baking foil
- Alfredo sauce
Steps:
1. Preheat oven to 415 degrees Fahrenheit.
2. Wash & skin your zucchini; with the potato peeler, create your "zoodles" by shredding the zucchini long-ways. Alternatively, you can use those contraptions that make your zoodles into spirals or a more spaghetti-like shape; I prefer wide & flat zoodles.
3. Dehydrate your zoodles removing the moisture with paper towels or a light kitchen towel.
4. Olive oil up some baking foil on a cookie pan or baking pan; shape your foil into a "boat."
5. Add your baby potatoes to your foil boat, season with salt, black pepper, paprika, ginger, & basil spice. Mix so the oil & seasonings coat the baby potatoes evenly.
6. Cover your foil boat; bake your potatoes for about 40 - 45 minutes.
7. While your potatoes bake, season your sliced raw chicken in a large bowl with a pinch of salt & pepper.
8. Heat & oil up your cast iron skillet; sautee some diced garlic cloves in the oil as it heats.
9. Add your chicken to the hot skillet; flip and stir until some parts are golden brown. Remove & separate your chicken from the skillet to let it rest.
10. After you have removed the chicken from the skillet, bring the skillet back to the stove. Melt half a stick of butter in it.
11. Cook your zoodles in the same skillet; constantly stir so all zoodles wilt.
12. Add the chicken back to the skillet with the zoodles; pour your Alfredo sauce in. Stir. Heat until bubbling.
13. When your potatoes are done, remove from the oven, allow a few minutes to set
