Mom, I am so sorry to tell you this, but my chicken and dumplings may have been better than yours! Don't get me wrong, it has been a while since I have had yours, but mine was pretty darn good tonight!
A lot of folks think that based on on my posts the Moss family only ever eats out, but that couldn't be further from the truth. Yes, we enjoy patronizing the fine eating establishments our community has to offer, but we are often just as happy to cook at home, and after a LONG weekend of working, I decided to take some home time today. And I spent quite a bit of today in the kitchen!
Now don't get me wrong, I was working while I played. Answering phone calls, arranging inspections, emailing agents and attorneys, setting appointments, etc, but sometimes you are able to do it while making biscuits.
Speaking of biscuits, that was the first thing I made today; Amanda and the boys have been asking for biscuits, so I whipped up a batch. It makes breakfasts easy during the week. And with Isaac having band camp all week, easy breakfasts are a help. I had a leftover dough, and I considered the different options, and decided to try something I had never made or even heard of before...figgy pie.
We all have heard of figgy pudding from the classic Christmas song, "now bring us some figgy pudding, now bring us some figgy pudding". But I decided to try my hand at figgy pie. I rolled out my left over dough real thin, and laid it out in a pie pan (I sprinkled a little flour in thr bottom of it so it wouldn't stick). I filled it full of figs...we have had more figs than we know what to do with this year, even after eating WAY too many and giving a bunch of them away.
I put a stick of unsalted butter, a cup or so of sugar, and a table spoon of cinnamon in a Pyrex measuring cup and melted it in the microwave, stirred it together real well, and poured it over the figs, and then baked it in the oven for about 35 minutes until the crust turned that perfect shade of brown, then pulled it out and let it cool.
It wasn't bad, but it was kind of runny, so I put it in the fridge to have after dinner and let it set up a bit.
For dinner tonight I decided to try my hand at chicken and dumplings. I had never made them before but i had seen my Mom and Grandmama make them plenty of times, so I had a rough idea.
I took 4 boneless, skinless chicken breasts and put them down in the crock pot with about 6 cups of chicken broth, salt, pepper, onion powder, and garlic powder and let them cook on high for about 6 hours. When it was done, it was so tender you could shred it just by looking at it, but I decided to use a fork.
I put two tablespoons of self rising flour down in a measuring cup with half a cup of cold water, mixed it together real well, and stirred it in to thicken up the broth, and then I made another small batch of biscuit dough (2 cups of self rising flour, 1/4 cup of bacon grease, and about 3/4 cup of milk, just enough to get it to pull away from the sides of the bowl and turn into dough...you don't want too much milk in there).
I rolled them out like normal, but instead of cutting it into circles and tossing them into the oven I cut them into strips and layed them in on top of the chicken and put the lid back on the crock pot for another half an hour.
While that was plumping up I cut some Brussel sprouts in half, melted some bacon grease down in a frying pan, put the Brussels in, and sprinkled on some salt, pepper, and curry powder, and fried them up nice.
By the time those were done the chicken and dumplings were ready. I tell you, my chicken and dumplings ranking has for the last 41 years been:
1: My Mom's
2: My Grandmama's
3: Cracker Barrel's
But after today, as much as it breaks my heart to say this, I think mine has gone to the top of the list! This was the best chicken and dumplings I have ever had, and it was so easy! Sorry Mama, and I will be happy to go head to head with you next time you come down, but these were fantastic!
We had some figgy pie for dessert, and that time in the refrigerator was exactly what it needed to conceal and develop the flavors...kind of like potato leek soup is great but after a night in the fridge it comes back even better as vichyssoise, this was even better the second go-round.
I am so blessed that I had so many great teachers who showed me the way around the kitchen, and I am so happy that my boys are taking an interest in learning how to cook as well! Sometimes after a period of hard work, it is nice just to get in the kitchen and play!
