Paleo overnight "oats"

1.25 cups walnuts, pecans, and sunflower seeds
2 tbsp chia seeds
1.5 tbsp ground flax seed
1 tbsp pure maple syrup
1/2 tsp vanilla extract
Pinch of sea salt
1.5 cups full fat coconut milk
Topping:
Cinnamon, almond butter, banana slices, and blueberries

Pulse nuts in a blender or food processor until finely ground. Mix with other ingredients and place in mason jars overnight. Top with toppings before eating.

I had low expectations for this meal prep. I don't like cauliflower rice, and I think simple sushi can sometimes be a little boring in the flavor department. But I just tried this and it's my new favorite meal prep! The spicy mayo was sooo good and it was so easy to make!

Just sautee cauliflower rice in a skillet for a couple of minutes with rice vinegar and coconut aminos or soy sauce. Mix mayo and Sriracha together and put everything in your meal prep container! I added purple cabbage, shredded carrots, sliced avocado, seaweed snacks, imitation crab, and sesame seeds to mine. It would be great with cucumbers, green onion, pickled ginger, wasabi, and any of your classic sushi fish as well!

DYE FREE icing. Thought I would share in case anyone else is looking for alternatives. We cut out food dye but I still wanted a pretty cake and cupcakes for our daughters birthday. You can blend freeze dried fruit into a powder and add it to any frosting recipe for color! I used freeze dried strawberries to make this icing!

Buffalo chicken stuffed sweet potato and salad! I used precooked frozen shredded chicken (rotisserie would work well!) and sautéed it with an onion. Then I let it simmer in some Primal Kitchen Buffalo sauce. I topped a baked sweet potato and spring mix with the chicken and ranch!

Lunch meal prep! Steak stir fry with peppers, onions, mushrooms, and zucchini with coconut aminos, pepper, and garlic. Served with cauliflower rice recipe ⬇️⬇️ and Primal Kitchen Buffalo sauce.

Riced cauliflower
1 tbsp olive oil
1 diced medium white onion
2 cloves minced garlic
1 minced jalapeno
3 tbsp tomato paste
1 tsp sea salt
1 tsp cumin
½ tsp paprika
3 tbsp fresh chopped cilantro
1 tbsp lime juice

Heat a skillet over medium high heat.Add the onion and sautee until soft and translucent, stirring occasionally, 5-6 minutes. Add the garlic and jalapeno and sautee until fragrant, 1-2 minutes. Add remaining ingredients and sautee for 2 minutes.

Breakfast meal prep! Scrambled eggs, chicken apple sausage from the skillet, and air fryer asparagus on a bed of baby kale with garlic balsamic mushrooms! Recipe for mushrooms ⬇️⬇️

3 tbsp balsamic vinegar
1 tbsp coconut aminos
2 tbsp olive oil
16 oz baby bella mushrooms
1/2 tsp sea salt
1/4 tsp black pepper
4 cloves garlic, minced
1 shallot, minced
2 tsp fresh thyme leaves

Sautee mushrooms in olive oil in a skillet on medium heat for 5 minutes. Add remaining ingredients and cook for additional 2 minutes.
