Imma see if I can remember this off the top of my head.

5-6 cups of flour
2 table spoons of sugar
1 table spoon of dry yeast
1 tea spoon of salt
2 cups of water 80°f to activate the yeast.

Mix warm water with yeast, salt, and sugar until dissolved. Let activate for 5-10 minutes

Mix activated yeast with flour. I like to start with 5 cups and add more little at a time until I get the right consistency.

Put dough on floured surface and kneed vigorously at least 10 minutes. The more you pretend like that dough is a UFC opponent the better the bread.

Place somewhere warm preferably 80°f but not warmer than that. Cover with slightly damp rag and let it rise. I like it to almost triple because it sours the dough a bit.

Once risen, punch dough back down and kneed again until the dough is consistent. Cut dough in 2 and place in greased bread pan or on top of greased cookie sheet. Here you can do a quick egg wash on top and add things like grains to make a crust. Slice 3 times on top to let steam out, and bake at 350° maybe a bit higher for higher elevations. Bake until crust is golden.
