Ready in 30 minutes in one-pot (less dishes) & I recently made it for my sweet friend who is vegetarian and she went back for seconds. 🤗 I hope y’all enjoy it as much as we do! Ingredients:• 1 can pumpkin puree, 15 oz (425g)• 1 can black beans, 15 oz (425g)• 1 can red kidney beans, 15 oz (425g)• 1 can pinto beans, 15 oz (425g)• 1 large can fire-roasted diced tomatoes, 28 oz (794g)• 2 Tbsp extra virgin olive oil (30ml)• 1 small yellow onion• 3 cloves garlic• 1 red bell pepper• 1-2 c low sodium vegetable broth (237-473ml)• 1 Tbsp chili powder (15g)• ½ Tbsp ground cumin (3g)• 1 tsp smoked paprika (1g)• ½ tsp ground cinnamon (1g)• ½ tsp salt, more to taste• ¼ tsp black pepper, more to tasteHOW TO MAKE IT: • Prep by chopping the veggies including the onion, garlic and bell peppers. Drain and rinse the beans. •Heat olive oil in a large pot or Dutch oven on medium heat. Add the onion and bell pepper and cook for 3-5 minutes until softened. Then add the garlic until fragrant, about 30 seconds. • Add the remaining ingredients including the beans, pumpkin, tomatoes, broth, seasonings, and salt & pepper. Bring to a boil. Reduce heat to low and simmer, stirring occasionally, for 20-25 minutes. Add more salt if needed. •Remove from heat and add fresh lime juice (optional).**if you want to make this pumpkin chili in the crockpot, simply add the ingredients to your crockpot and heat on low for 6-7 hours or high for 3-4 hours.Dietitian tip 👉🏼 it’s so basic, but a reminder that one of the best ways to ensure you’ll eat nutrient-rich foods is to find simple recipes you enjoy.
