π¦Beat the summer heat with this super easy - no churn - ice cream recipe!π
Fruit:
1. Using small berries (like the blueberries) or diced up berries (like the strawberries), add to a medium pot the berries, 3T sugar, and 3T lemon juice.
2. Simmer over medium heat for about 10 minutes. Stirring occasionally. You want some of the blueberries (or similar small berry, if using) to burst and release their juices. If using strawberries (or other larger fruit that has been diced), use a potato masher to help break up.
3. Let cool thoroughly before beginning to make the ice cream. I put my blueberries into the fridge for an hour or so, but I put my strawberries in overnight because I started a day before I wanted to eat it.
Ice cream:
1. Whip 2 cups (1 pint) of heavy whipping cream, until stiff peaks form.
1a. If wanting to make a "cheesecake" version, in a separate bowl, whip softened cream cheese for a few minutes, then add in 14 oz sweetened condensed milk (about 1.5 cans) until thoroughly combined.
2. Fold into the whipped cream 14 oz (about 1.5 cans) of sweetened condensed milk.(If you don't have any on hand, see note below.) Make sure to combine thoroughly but gently.
3. Add in your chilled fruit. For the cheesecake ice cream, I poured into my freezer container the ice cream, then put the berries (and crushed Graham crackers) on top and gently swirled to not over mix and turn it all purple. For the strawberries, I made sure to thoroughly incorporate throughout.
For soft serve, freeze a few hours. For hard scoop ice cream, freeze approximately 5-6 hours. Let soften on counter 15 minutes before scooping.
Serve with extra graham cracker squares or other toppings, if desired.

Dear Lord, when I am facing a challenge of any size, help me turn to you first. You have seen me through every trouble I have faced in life so far, and I know you will not leave me now.

One-pot chicken broccoli and rice casserole
Ingredients:
2 chicken breasts, cut into bite-sized pieces, seasoned with s&p
2 tbsp olive oil, dived
1 onion, diced
2 stalks celery, diced
1 c rice, do not rinse!
2 head broccoli, cut into bite-sized pieces
1.5 c milk of choice
1 c chicken broth
shredded cheese, to your liking, optional (I used a nice, creamy Wisconsin cheddar.)
Directions:
1. Using a large, high sided skillet with lid, heat olive oil, and cook chicken pieces. Remove from heat and set aside.
2. Add additional oil to sautee onions and celery for a few minutes. (Carrots might also be a good addition for color and nutrients.)
3. Add in Rice, stirring for a few minutes to toast.
4. Add in liquids and turn heart to high. Stirring. When it begins to boil, turn down heat and put on lid for 10 minutes.
5. After 10 minutes, without stirring, add broccoli and chicken on top. Replace the lid and cook an additional 10 minutes or until rice is cooked.
6. When rice is finished cooking, remove from heat and add cheese of desired. I stirred in some of my cheese add well as topping with some for presentation.
This can be served on its own as a complete meal, or add a side salad and rolls to stretch it out.
*Makes 6 servings.
*Approx 300 cal depending on type of milk and cheese used.
