Spicy chili oil garlic noodles 🍜
Ingredients
1 small onion, thinly sliced
2 tbsp oil
2 pack ramen noodles
2 tbsp garlic, finely minced
4-5 tbsp green onion, chopped
1 tbsp tomato paste
2 tbsp chili oil
2 tbsp soy sauce
1/2 chicken bullion cube
1 tsp honey
Sesame seeds
3-4 tbsp unsweetened heavy whipping cream
Salt to taste
1/3 cup reserved noodle water
Instructions:
Cook ramen noodles according to package instructions or until slightly al dente, then drain, place in a bowl and set aside.
Heat oil over medium high heat until hot , add onion and sauté until light golden brown , add garlic, green onion, chili oil, soy sauce, honey, tomato puree , chicken bullion, tomato paste, cream and honey. ( add some noodle water if needed )
Add noodles and toss well until saucy and coated. Garnish with sesame seeds and green onions if desired, add more soy sauce if needed, and enjoy!

Mozzarella stuffed potato cheese puffs 🥔 🧀
Ingredients
3 russet potatoes
Salt and pepper to taste
1/2 cup mozzarella cheese cubes cut into small pieces
2 tbsp corn starch
1 tbsp fresh minced coriander
1 tbsp garlic powder
Oil for frying
Method:
Peel and cut the potatoes into small pieces. Boil in salt water until fully cooked.
Mash the potatoes. Mix salt,pepper, corn starch, coriander and garlic powder.
Make small ball shapes of the potato mixture by stuffing small piece of mozzarella cheese in them , making sure there’s no cracks in the balls.
In a pan add oil on medium heat, once the oil is hot add potato balls, (do not overcrowd the pan / fry 5-6 balls at a time). Fry for 2-3 minutes or until golden and crispy. Garnish with chopped coriander and serve with your favorite dipping sauce.

Ingredients
3 large ripe bananas (roughly mashed)
8 Tablespoons melted unsalted butter
1/2 cup granulated sugar
1/2 cup brown sugar (packed)
1 large egg (at room temperature)
1 teaspoon vanilla extract
1 1/2 cup all purpose flour
1 teaspoon baking soda
Pinch of salt
1/2 cup semi sweet chocolate chips
Method:
Mash the bananas in a mixing bowl, add melted butter, brown sugar, caster sugar, egg and vanilla extract. Whisk well until combined.
Now Mix in the dry ingredients by adding all purpose flour. Sift the flour before adding into the batter. Add baking soda, salt
Lastly mix in chocolate chips. The end result will be a thick mixture.
Pre heat the oven to 350 degrees. Line a loaf pan with parchment paper, put in the mixture and add some chopped walnuts and chocolate chips on top. Bake at 350 for roughly 1 hour and 15 minutes.

Ingredients
For the kofta kebab:
2 lb boneless chicken thighs, minced
1/2 yellow onion, finely chopped
1/2 red bell pepper, finely chopped
1/2 yellow bell pepper, finely chopped
1/2 orange bell pepper, finely chopped
1-2 jalapeño, finely chopped
1 tbsp fresh coriander , chopped
2 tbsp garlic paste
Salt to taste
1 tsp black pepper
1 tbsp garlic powder
1 tbsp onion powder
1 tsp red chili flakes
1 tbsp tomato paste
Method:
In a bowl add minced chicken, remove excess water from bell peppers and onion and add them to the minced chicken, add jalapeños and garlic. Season with salt pepper, red chili flakes, onion and garlic powder. Mix well until everything is combined.
In a skillet heat some oil. Make round kebabs and fry them on medium heat 4 minutes each side or until fully cooked.
Serve warm with rice , garlic sauce and grilled vegetables of choice.
Note:
give your hands a quick oil massage before making patties to prevent sticking to your hands !
When adding veggies to the meat mix, make sure to squeeze out excess moisture first. You don't want a soggy patty! If the meat mixture feels too wet, try adding 2-3 tablespoons of bread crumbs to absorb the excess moisture and get the perfect consistency.

Ingredients :
1 bread loaf
3/4 cup mozzarella cheese
For the garlic butter:
1/2 cup softened butter
4 cloves of garlic finely minced
1 tbsp finely chopped parsley
1 tsp red chili flakes
Salt and pepper to taste
For the chicken
1 lb boneless chicken breast
1 tbsp garlic powder
1 tbsp paprika powder

For the Alfredo sauce:
2 tbsp butter
1 cup unsweetened heavy whipping cream
1 cup Parmesan cheese
1 tbsp Italian seasoning

Method:
Pre heat oven at 355 F. Make the garlic butter by adding softened butter, garlic, parsley, salt, pepper and chili flakes in a bowl. Mix well and set aside.
Season the chicken with the seasoning listed above and cook for 6 minutes each side onto a hot pan or grill. Once cooked cut into slices.

Air fried chicken leg quarters with green chutney
Ingredients
4 chicken leg quarters
2 tbsp mayonnaise
2 tbsp tomato paste
4 tbsp oil
1 tbsp garlic paste
Salt to taste
1 tsp black pepper
1 tbsp cajun seasoning
1 tsp garlic powder
1 tsp onion powder
1 tsp red chili flakes
2 tbsp freshly minced garlic lemon juice
1 tbsp chopped parsley
For the Green chutney
1 cup coriander leaves
1/2 cup mint leaves
2-4 Thai chilies or Serano peppers ( adjust to taste)
2-3 cloves of fresh garlic
Salt and pepper to taste
1 tsp red chili flakes
1 tbsp cumin powder
1 cup yogurt
Method:
Clean and pat dry the leg quarters, in a mixing bowl add mayonnaise, garlic paste, oil, lemon juice, salt pepper, garlic, onion powder, red chili flakes and fresh parsley and Cajun seasoning Mix well. Add the mixture on the chicken. Let the chicken marinade for 2-3 hours or overnight.
Air fry at 400 F for 25-30 minutes flipping half way through. Serve with green chutney and enjoy.
For the green chutney:
First crush coriander and mint leaves a bit then add chopped green chillies, garlic cloves and cumin to the mortar and start crushing it using pestle with your hand until it is coarse in texture. Now add salt, red chili flakes and cumin powder pepper and crush it a bit more and mix it well. The amount of green chillies and garlic can be adjusted according to personal preferences. Once everything is crushed nicely you can freeze the mixture for later use.
Add yogurt to it, mix and serve!
Note:
You can also make this in blender. Place all of the ingredients in a blender except yogurt and mix until completely smooth. Stop in between to scrape down sides of the blender and add 1-2 tbsp of yogurt at a time to help move things in the blender.
Now add the mixture to the remaining yogurt mix well and serve.

8 oz semi sweet chocolate chips
2 eggs, room temperature
6 tbsp unsalted butter
1/2 cup granulated sugar
1/4 cup light brown sugar
3/4 cup all purpose flour
1 tsp baking powder
2 tbsp vanilla extract
4 tbsp unsweetened cocoa powder
1/2 tsp salt
Method:
Melt the butter and chocolate by double boiler method. For that Fill a saucepan with 1–7.5 cm of water and bring it to a simmer over medium-low heat. Place a heatproof bowl on top of the pan, making sure it doesn’t touch the water
Add chocolate and butter to the bowl
Stir continuously with a rubber spatula until the chocolate melts, which could take a couple of minutes to a few minutes longer depending on the amount of chocolate.
Once the chocolate is melted set aside to cool completely.
Preheat the oven to 350 F.
In a mixing bowl crack eggs , add brown sugar and mix for 3-4 minutes until the sugar is completely dissolved in the eggs and the mixture turns into light pale yellow in color. Add granulated sugar and mix for additional 2-3 minutes until completely dissolved. Add vanilla extract.
Note : Mixing sugar in eggs is very important to get that shiny top on cookies.
Add the egg mixture in the melted chocolate mixture and mix.
In a separate bowl combine flour baking powder cocoa powder and salt.
Add dry ingredients in the wet batter, and mix with a rubber specula until just combined. The dough should be of pudding like consistency.
Line a baking sheet with parchment paper and scoop out the dough. Place no more than 4 cookies on a baking sheet as they spread while baking.
