Two types of tallow, one from a wild moose and the other from locally raised beef. Notice the color difference. Using on a modified carnivore-Mediterranean type low-carb diet. Super tasty. Tallow is a rendered fat that's solid at room temperature and often used in cooking and skincare. Tallow from pigs is typically called lard for those purists 🫎 😋 🤠

The river was frozen over in mid-February due to cold temperatures. Today brought freezing rain and warmer evening temperatures. At this rate, January may be the soonest the river ices over. Mother nature is being cagey 🧐❄️

Could you imagine? I remember a time back in the late 70s when I was driving to Anchorage from Valdez, alone, when the northern lights came out and I had to pull over and listen to them as they made crackling noise in the sky 🤠

I imagined living on an Alaskan river or lake in a cabin during the Alaskan winter, foreign to most, but comforting to me.

Imagine waking up to a world blanketed in pristine snow, the water’s surface frozen over, creating a natural ice rink right at your doorstep. The silence is profound, broken only by the occasional crack of the ice or the distant call of a bald eagle.

Mornings start with the warmth of a wood stove, the cabin's heart, where you can sip coffee brewed from water melted from the river's ice. The air is crisp, invigorating, and every breath feels like a new beginning.

Winter here isn't just about enduring the cold; it's about embracing it. Ice fishing becomes a daily adventure, with the promise of fresh, wild salmon or trout for your evening meal. The Northern Lights, or Aurora Borealis, dance across the night sky, painting it with colors that no digital screen could ever capture.

The solitude brings peace, a time for introspection or sharing stories with friends around a crackling fire. Snowshoeing or cross-country skiing are not just activities; they're ways to explore the untouched beauty of the Alaska, where moose tracks in the snow lead you through a winter wonderland.

And then there's the community spirit - neighbors checking on each other, sharing resources, and celebrating the small victories of winter survival in Alaska. Every day is an adventure, every view a postcard.

Living in a cabin on the Kenai River in winter, as I hope, is not just surviving; it's thriving in one of the last great wildernesses, where nature's beauty is at its most raw and majestic.

Doesn't look like the river will freeze over before the end of the month? Last year it froze right after Christmas. It's 40° out, and the rain has taken almost all our snow. There have been mornings with freezing rain, causing accidents, and tomorrow we have an 80% chance of snow for the next couple of days.

I'm really digging this moose tallow I got from my friends. It tastes good, and I feel good. I heard Costco got in some beef tallow, but I haven't checked it out locally yet 🤠

Good grief! It took me a few hours to get the split pea and ham soup to taste good - almost to the point of adding a lot of vodka 🤣. While there are a few carbs that won't work with a low-carb diet, as I said before, it's all in moderation 🤠

I'm trying a version of the carnivore diet. Love this moose tallow. In two weeks I've lost 5 pounds. My goal is to lose 15 pounds before Christmas, then bring on the pumpkin pie 🥧 🤠

Soldotna's official Christmas tree lighting in the park, including fireworks, happened last night. I enjoyed the view from the cabin. Love this little town 🎄🤠

Eeeeee DOGGIE!! This small town goes big when it comes to lighting up the town Christmas tree. The streets will soon be decorated with Christmas cheer, which I'm looking forward to. I'll post a video tomorrow. Stay tuned 🎄🎆 Cabin life! 🤠

This past week, Alaska freezing rain has been Mother Nature's calling card. The rain falls wet, then freezes at night and in the morning, leaving behind glare ice that can snag unsuspecting drivers. If you're planning to travel, be sure to take your time or travel during clear, sunny days. The forecast indicates rain with cooler temperatures 🥶🚗🤠

I bet this Bud Light truck wasn’t “light” on the gas pedal. It probably found some frost in a shady section on a corner. It’s so important to be careful in areas not hit with sunshine 🥶 BREAKER BREAKER 19 we got a little dippy do in the shady route 🤪

Had a great trip down and back to the big city. The road between Soldotna and Skilak Lake was a little frosty, but overall the roads were great in both directions. Ole Yukie running like a champ! I pulled over at the Kenai-Russian River ferry crossing area and saw a fish jump. There was no ice buildup, though 🤷‍♂️🧊🤠

Eeeeee DOGGIE! I slayed the dragon today and threaded the needle. I drove from Anchorage to Soldotna without any issues. I only saw one semi-trailer in the ditch. I timed my drive to coincide with the sun warming the roads, which were mostly wet until the last 40 miles. I arrived just in time as it started to get dark. We're now looking at only a few hours of sunlight a day. Tonight these roads will turn into ice as it freezes 🥶 GIDDY UP! 🤠

40° River isn’t frozen yet!

I completed a quick trip to the big city before the next winter storm passes through. It was seasonably warm, then turned to freezing rain, and snow is now forecast for several days. Gotta love Alaska! ❄️🤠

Turnagain Arm Ice Field

Good morning! I passed through Turnagain Arm on my way to Anchorage and saw huge amounts of ice flow. The area is known for its strong tides and is really amazing. I'm heading back to the cabin today, trying to beat the weather back 😱🥶❄️

Anchorage Bound! Roads are Great!

Quick road trip to Anchorage. The roads are in good condition. Temperatures will be in the mid 20s with snow projected in the next couple of days. Travel safe. I'll try to post a couple of photos of Anchorage later. Maybe I’ll treat myself to a steak dinner 🫣🤷‍♂️🤠

ROAD TRIP! Russian - Kenai Ferry Area

ROAD TRIP! Pulled into the Kenai - Russian River Ferry area to check on ice flow and there is no ice. Lots of ice floating by the cabin 22 miles up river but nothing here. The Journey continues! 🤠

I'm loving these cabin morning breakfasts! Moose tallow gives it a whiff of moose taste that oddly evaporates in the pan. Time to lose 10 pounds before I gain 10 more. I'm switching carbs for protein, fat, and eggs to keep sugar levels down, but then I have to answer to my cardiologist. Is this game even winnable? MORE BACON! 🤣🫣 #bacon #carnivore #cabinlife

When Will Kenai River Freeze? 🧊

WINTER UPDATE! It's getting very cold! Overnight lows of -10° at the cabin. Fairbanks reports -35°. The river is starting to look a little frosty with ice flowing down. When will it freeze over? Last winter it was around Christmas time. Stay frosty ☃️ my friends! 🥶🤣
