This isnā€™t your average shepherdā€™s pie. I took smoky, tender brisket leftover from a previous cook and built it into a rich, hearty filling loaded with veggies and savory gravy.

But the real kicker? Instead of just mashed potatoes on top, I finished it with a layer of toasted cheese, melted and browned just like the top of a French onion soup. šŸ§€šŸ”„

šŸ”„ Hickory Smoked & Reverse Seared Tri-Tip šŸ”„

Juicy, smoky, and finished with a perfect reverse searā€”this tri-tip delivers everything BBQ should be. Hickory smoke builds the flavor, and that final sear locks it all in with a beautiful crust.

To top it off, I made a fresh homemade chimichurri. Right before serving, I dropped a hot coal into the jar, closed the lid, and let the smoke infuse until it was time to eat. The result? A bold, smoky kick that perfectly balances the freshness of the herbs. (And yesā€”donā€™t forget to remove the coal before eating. šŸ˜‰)

Shoulder surgery may have taken me out of the pit for a minute, but my wife came in clutch with a steak and sautƩed mushroom sandwich.

She claims it was ā€œfor my recovery,ā€ but letā€™s be honestā€”this thing was so good I think sheā€™s just testing if she can steal my spot as Pitmaster.

Pro tip: if you ever want to heal faster, skip the ice packs and ask your spouse to bring you a sandwich that makes you forget you even have a shoulder. šŸ’ŖšŸ„©šŸ„

If ever in Eastern Oregon be sure to check out the Cowboy Dinner Tree INC. Ranch style cooking in an awesome atmosphere!

You will not leave hungry! You can order either a 26-30 oz Cowboy Cut Sirloin or a Whole Chicken, served with a baked potato, Cowboy beans, a salad, they have great iced tea, and finished off with strawberry shortcake or butter cream pie. Naturally, I tried both! The food was all fantastic!

A little backstory: Years ago, under a lone juniper tree stood an old shackā€”now home to Cowboy Dinner Tree. Back then, ranchers drove cattle from Paisley, Summer Lake, and Silver Lake through the Sycan Trail to the lush meadows of Sycan Marsh. The Dinner Tree marked the halfway point, where hungry cowboys found the chuck wagon waiting with buckaroo beans and biscuits. Now it is the Dinner Tree carrying on the tradition and still serving homemade from scratch ranch style food.

šŸ„£ Trial By Fire Chipotle Ranch

1 cup mayonnaise

1 cup heavy cream

2 TBSP Hidden Valley Ranch seasoning

1 tsp smoked paprika

1ā€“2 TBSP Chipotle Tabasco Sauce (heat to taste)

Mix well and let it chill for 30 minutes so the flavors marry. Then dip, dunk, and drizzle away.

Smoked Meatloaf Like Grandma Used to Makeā€¦ With a Twist šŸ”„šŸ–

This oneā€™s straight from the heart ā€” a rich, tender smoked meatloaf slathered in my grandmaā€™s legendary sweet & tangy sauce, then finished with a crown of crispy fried onions for that perfect crunch.
