The wife got invited to go to the Beavers game with a couple friends. I decided to treat myself since I was watching the game from home! I think I managed!
Plum and Habanero Pork Belly Lollipops:
I found a small pork belly at the local grocery store and had to take it home. Im glad I did because these turned out even better than expected. My wifes cousin Jeremy Braun, makes a lot of different jellies and one of my favorites is his plum and habanero combination.
I mix 1 cup Head Country Honey BBQ Sauce and 1/3 cup of plum and habanero jelly and heat in a sauce pan until dissolved and we'll mixed. Slice pork belly into strips between a 1/4 and a 1/2 inch thick. Seasoned with Meat Church Texas Sugar rolled up and stabbed with a skewer to hold it together. Ran the smoker at 250 for 2 1/2 hours using Jealous Devil Lump Charcoal and Apple wood until they had the color I wanted. Transfered to aluminum pan, coated with glaze, add 2 TBSP Brown Sugar and about 4 pads of butter, cover and add to oven at 350. After 30 minutes I started checking for probe tender (around 200 internal). Once close to probe tender I uncovered and let cook about 10 minutes to tack up my glaze.

If you're looking for an idea of what to cook for your significant other, I highly recommend a mouthwatering tri-tip! That is what my spouse requests more than anything else I cook.
Used some leftover brisket heated up in the sous vide to make these delicious brisket grilled cheese sandwiches!
Toasted potato bread, miracle whip, 4 slices of American cheese, and a large handful of chopped brisket.

Applewood Smoked Chicken Breast Sandwich:
Need an easy delicious dinner? Try this one out.
I seasoned the chicken with an apple seasoning I picked up at my local Winco. Using lump charcoal and apple wood chunks, brought the pit up to 300 degrees. Checked internal temp with the Joy125 instant read thermometer and pulled once reached 160 (Approximayely 45 Minutes). Rest 5 minutes and sliced. Man were they juicy!
I used Miracle Whip but mayo would work just fine if thats not your thing. Melted a little cheddar jack over the top and added a few slices of Avocado.
