Chopped BBQ Beef Sandwiches:
- Paired with some flaming hot limon cheetos!

I used a Denver Cut Steaks. Cooked with indirect heat on my little webber Smokey Joe for 20 minutes, rotating at the 10 minute mark. I dropped a couple oak chips on the charcoal to give some smoke and used the Kingsford Mesquite Charcoal. Transfered to the charcoal side and seared about 3 minutes each side. Let rest 5 minutes then added to bag with a 1/4 cup of Head Country BBQ sauce. Vacuum sealed and put in the sous vide at 197.5 for 3 hours. Pulled like butter then I chopped it up and added 1/4 cup of the juice from the bag mixed with 1 cup Head Country.

I was searching for a good steak sandwich here in my hometown yesterday and it was nowhere to be found so I decided today that would be what I'm cooking!

Grilled ribeye basted in a mix of Cholula and Worcestershire sauce then seasoned with SPG. Used remaining mixture mixed with a couple tablespoons Dukes Mayo for the sauce. Hit my sourdough with EVOO and seasoned with a little salt and red pepper flakes then toasted the sourdough and layered with sauce. Add layer of grilled red onion and drizzle with a little sauce. Add sliced (across the grain of course) ribeye, drizzle a little more sauce and top with pepper jack cheese.

Juicy and Delicious St. Louis Style Ribs!

Smoked at 250 the whole way with no wrap. Let them ride for 3 hours then spritz with a 50/50 mix of apple cider vinegar and apple juice every hour until they hit my desired doneness (190 - 195 internal temp)

Homemade St. Louis-Style Rib Rub:

Ingredients:

1/4 cup brown sugar
1/4 cup paprika
2 tablespoons black pepper
2 tablespoons kosher salt
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon smoked paprika
1 teaspoon cayenne pepper (optional for heat)
1 teaspoon ground mustard
1 teaspoon cumin
