Easy recipe for stir-fried clams with chili paste.

Ingredient:
500 g. Fresh clams, soak in some water.

2 tbsp chilli paste.

4 fresh chilli.
3 cloves garlic.
4 small shallots.
A handful of sweet basil.

2 tbsp fish sauce.
1 tsp light soy sauce.
1 tsp seasoning powder.
1-2 tsp brown sugar light.
1 pinch of kosher salt.

3 tbsp vegetable oils.

Instructions:
- Heat a pan over heat.Add vegetable oil.Wait for the oil to heat up.
- Peel the shallots and garlic and pound them together with chili and salt until crushed.
- Scoop into a pan and stir-fry with oil until fragrant.
- Add the clams and stir-fry until well blended.
- Season with fish sauce, light soy sauce, seasoning powder, sugar and chilli paste, stir fry together is well.
- Add sweet basil into,keep stirring untill cooked.
- Close heat and then scoop into a serving plate.

Pickled mustard green and pork ribs soup recipe.

* Ingredient:
500 g. Pork ribs, cut into pieces.

1 pickled mustard green sprig, cut into bite-size
pieces.
4 cloves garlic.
2 tbsp green onions, cut into pieces.
4 coriander root.
10 black pepper seed.

2 tbsp light soy sauce.
1 tbsp seasoning powder.
1 tbsp brown sugar, light.
1 pinch kosher salt.

Bone broth.

** Instructions:
- Chop the pickled vegetables and wash them clean.Set aside to drain.
- Put the broth in a soup pot and bring to a boil over medium-high heat.
- Pound the black pepper until fine, add the peeled garlic, salt and coriander root, and pound until well blended.Then scoop into a soup pot.
- Add the pork ribs.No need to stir.
- Season with light soy sauce, seasoning powder and sugar.
- Wait for soup boiling again, add pickled mustard green into.
- Reduce the heat to medium.Continue to simmer until the pork ribs are tender.
- Turn off the heat and serve.

*** How to make pickled mustard green:
- Fresh mustard green is dried in strong sunlight for 8 hours to reduce its freshness.
- Use a handful of salt per 5 kilograms of vegetables, knead until well blended.
- Put the vegetables in a container with a lid.
- Pour in the rice washing water until it covers the rice.
- Pound a handful of garlic and add it.
- Add in the steamed sticky rice.
- Use something heavy to hold the vegetables down so they don't float above the water.
- Leave to marinate overnight. The sourness is just right and can be used in cooking.If we ferment for several days, the vegetables will change color to yellow, which is a natural process.It is not harmful to the body. We can consume it normally and the sourness will increase. If you want to stop the sour taste of vegetables, store them in the refrigerator. And if the surface of the container containing the pickles has black mold, it means that we have not added enough salt.Add more salt.

Ingredient:
500 g. Fresh prawns, peeled and deveined.

1 broccoli head, cut into pieces.
3 cloves garlic, minced.

1 tsp oyster sauce.
1 tsp light soy sauce.
1 tsp seasoning powder.

1 tbsp rice wine.

2 tbsp olive oil.

Instructions:
- Put fresh prawns, broccoli, garlic, oyster sauce, light soy sauce, seasoning powder and rice wine into a bowl.
- Preheat a pan to hot until smoke, add olive oil into

Ingredient:
10-15 green chilli, young.
2 cloves garlic.
1 pinch kosher salt.
1 tbsp fish sauce.
1 tsp seasoning powder.

Instructions:
- Grilled young chili Cook the garlic.
- Peel the garlic and chili to remove the burnt parts.
- Pound with salt until crushed.
- Scoop into a small cup.
- Season with fish sauce and seasoning powder.

Baked Mackerel with Harissa sauce recipe.

Ingredients:
4 fresh Mackerel, whole.

2 tbsp Harissa sauce.

1 tsp seasoning powder.
1 tsp paprika smoked.
1 tsp cumin.
1 coriander sprig, chopped for garnish.
1 preserved Lemon.
1/4 tsp kosher salt.
1 tsp coriander root powder.

1 tbsp olive oil.

Instructions:
- Mix Harissa sauce, seasoning powder, paprika smoked, cumin, kosher salt, coriander root powder and olive oil together is well.
- Coat all Mackerel with them.
- Preheat the oven at 190°C, bake for 20-25 minutes or untill cooked as your choice.

Easy spicy pork liver salad recipe.

Ingredients:
300 g. Fresh Pork livers, thinly sliced.

2-3 tbsp fish sauce.
1-2 tsp chilli powder.
2-3 tbsp lime juice.
1 tsp seasoning powder.
1 tsp rice powder.

1 tsp green onion, chopped.
1 tsp coriander, chopped
1 tsp parsley, chopped.
1 tsp kitchen mints.

Instructions:
Add fresh thinly sliced pork liver into a pot over midium-high heat, then pour 2 tbsp water into the pot too. Stir untill cooked, close heat.

Prepare spicy salad:
- Mix fish sauce, chilli powder, lime juice, seasoning powder, rice powder together is well.
- Add green onion, coriander, parsley and kitchen mints into, mix well.
- Pour the dressing to over cooked pork liver, mix well.
- Place lettuce to serving plate, then scoop spicy pork liver salad into.

Stir-fried Seabass on steamed rice recipe.

Ingredient:
1 large Seabass, fillets.

1 tsp oyster sauce.
1 tsp light soy sauce.
1 seasoning powder.
1 tbsp rice wine.
2 tbsp all-purpose flour.

2 tbsp green onions, chopped.
1 fresh celery, chopped.
2 cloves garlic, minced.
2 tbsp onion, chopped

2 tbsp olive oil.

Instructions:
- Cut the sea bass into pieces and pat dry.
- Mix oyster sauce, light soy sauce , rice wine seasoning powder, finely chopped garlic, chopped onion and flour together.
- Add the fish pieces and mix well.
- Heat a pan over high heat.
- Add olive oil. Wait until it is hot until it smokes and pour the fish into a bowl with all the seasonings.Stir-fry quickly until the fish is cooked. - Garnish with chopped spring onions and chopped coriander.Then ladle over rice and serve.

Easy deep fried Sea bass recipe.

Ingredients:
1 fresh Seabass, whole.

2 tbsp all-purpose flour.
1 tbsp paprika.
1 tsp chilli powder.
1 tsp fresh parsley, chopped.
1 tsp seasoning powder.
1/4 tsp sea salt.

1000 ml. Palm oils.

Instructions:
- Mix all-purpose flour, paprika, chilli powder, parsley chopped, seasoning powder and salt is well.
- Seabass cut the belly, remove intestine out, then cut to stripes all whole.
- Coat the mixing all over whole fish and fry into medium heat oils. Untill cooked.
- Serve with a side dishes as such deep fried banana and easy vegetables sliced salad.

Easy Roasted Seabass Recipe.

Ingredients:
3 Seabass, whole.

2 tbsp fresh coriander, chopped.
2 tbsp lemongrass powder.
2 tbsp coriander root power.
1 tsp kosher salt.
1 seasoning powder.
1 tbsp Lemon juice.

2 tbsp olive oil, extra virgin.

Instructions:
- Mix lemon grass, coriander, salt, seasoning powder and 1 tbsp olive oil together, then coat all over three fish.
- Drizzle olive oil on grill rack, and grill on medium heat until cooked all two side.

Prepare to serve:
Arrange grilled fish into serving plate. Sprinkle with Lemon juice and coriander chopped.

Ingredients:
1 large fish, whole.

1 large cloves garlic, minced.
1 tsp coriander, chopped.
1 tsp cumin.
1 tsp black pepper, freshly ground.
1 tsp kosher salt.
1 lemon wedges.

1 tbsp olive oil, extra virgin.

Instructions:
- Preheat the oven at grill, to 180° C.
- Coat large fish with salt, black pepper, garlic, cumin, and coriander.
- Drizzle olive oil on baking plate. Place large fish into and then grill for 20-25 minutes or untill cooked.

Instructions:
- Preheat the oven to 190°C.
- Coat cod with garlic, lemon juice, black pepper and sea salt.

Easy baked Sardine with Chimichurri sauce recipe.

* Ingredients:
300 g. Fresh Sardine.
1 Lemon wedges.
1 tbsp Gremolata sauce.
1 tbsp olive oil.
1 tbsp White wine, dry.
1 pinch kosher salt.

** Instructions:
- Marinate fresh Sardine with Gremolata sauce, olive oil, dried white wine and kosher salt is fine.
- Preheat the oven to 190° C.
- Baked marinated Sardine for about 15-20 minutes.
- Garnish with lemon wedges, prepare to serve with Chimichurri sauce.

*** Chimichurri sauce ingredients:
0.25 cup green onion, chopped.
0.25 cup coriander, chopped.

Glass noodle salad recipe.

Ingredient:
100 g. Glass noodle, dried.

100 g. Minced pork, fresh.
250 g.Medium sized fresh shrimp.

2 large shallots.
2 stem celery, cut into pieces.
2- 3 tomatoes, wedges.
4 chilli, fresh.
2 cloves garlic.
1 pinch kosher salt.

4 tbsp fish sauce.
4 tbsp lime juice.
4 tbsp brown sugar, light.
1 seasoning powder.
2 tbsp pickled garlic water.

Instructions:
- Soak the glass noodles until soft before boiling them.Cut into short pieces and drain the water first.Then put in a mixing bowl.
- Fresh shrimp, peeled, remove the head, remove the black vein on the back.Boil in boiling water for 5-10 minutes.Put in a mixing bowl.
- Cut off the eyes, mouth and ink sacs of the squid.Cut into bite-sized pieces.Boil in boiling water for 5 minutes.Put in a mixing bowl and set aside.
- Mix the dressing with fish sauce, lime juice, pickled garlic juice, sugar, and seasoning powder.
- Pound chili, garlic, salt is fine , then add into mixing bowl, add sliced shallots into together.

Spicy stir-fried Spaghetti with Seafood recipes.

Ingredient:
60 g. Spaghetti.

5-6 fresh prawns, peeled and deveined.
1 squid, cut into pieces.

1 tsp light soy sauce.
1 tsp fish sauce.
1 seasoning powder.

4 fresh chilli.
2 cloves garlic.
5-6 young peppercorns.
1/3 cut carrots into the bar.
1/4 tsp chilli powder.
Sweet basil sprig.

2 tbsp olive oil.

Instructions:
- Bring water to a boil, add spaghetti and boil for 15 minutes.Set aside to drain.
- Heat oil in a pan.Pound the chili with garlic and salt and stir-fry until fragrant.
- Add squid, shrimp, carrots and peppercorns, stir-fry until cooked.
- Season with light soy sauce, seasoning powder , chilli and fish sauce, stir fry together is fine
- Add sweet basil into, keep stirring.
