Limoncello ring cake

Limoncello ring cake, a dessert that captures the essence of the Amalfi Coast.

The sugary sweetness of lemons, combined with the rich aroma of limoncello, creates a taste that is both refreshing and indulgent.

Filled with a silky limoncello cream, this cake is a decadent celebration of Italy’s love of citrus and the art of dessert.

Inspired by the iconic Amalfi lemons, known for their fragrant zest and sweet and tart flavor, this cake brings a slice of Southern Italy to the table.

The tart notes of lemon zest and limoncello syrup harmonize with the delicate almond flour base, offering a perfectly moist and flavorful crumb.

Ingredients for a 7–8 inch (18–20 cm) Ring Cake:

For the Cake Base:

1 cup (130 g) all-purpose flour
3/4 cup (100 g) almond flour (or substitute with all-purpose flour)
3/4 cup (150 g) granulated sugar
6 tbsp (90 ml) vegetable oil
Zest of 2 large lemons
2 large eggs at room temperature
2 tbsp milk (dairy or plant-based)
1 tbsp vanilla extract or seeds from 1 vanilla bean
2 tsp baking powder
A pinch of salt
For the Limoncello Syrup:

1/2 cup (120 ml) limoncello
2–3 tbsp sugar
For the Limoncello Cream Filling:

1 cup (250 ml) heavy whipping cream
1/4 cup (60 ml) limoncello
3 tbsp powdered sugar

METHOD:

Cake:

Preheat the oven to 350°F (180°C). Butter and flour a ring cake pan.
Beat eggs, sugar, vanilla, and lemon zest with a mixer until light and creamy.
Gradually add the oil while mixing, ensuring a smooth batter.
Sift together the whole wheat flour, almond flour, baking powder and salt. Incorporate them into the batter alternating with the milk until smooth.
Pour the batter into the prepared pan and bake for about 35 minutes, or until a toothpick inserted comes out clean.
Let the cake cool in the pan for 15 minutes, then place it on a wire rack to cool completely.

Limoncello syrup:

Heat limoncello and sugar in a small saucepan over medium heat until sugar dissolves. Allow to cool slightly.
Limoncello cream filling:

Whip cream with powdered sugar until soft peaks form. Gently add the limoncello. Chill until ready to use.
Assembly:

Cut the cooled cake horizontally to create two layers. Brush both cut sides with limoncello syrup for extra moisture.
Spread limoncello cream on the bottom layer, then cover the top layer.
Dust with powdered sugar and serve the cake cold or at room temperature.

For those that don't know
Tiramisu(1 of my favorites) is an Italian dessert made of ladyfinger pastries (savoiardi) dipped in coffee, layered with a whipped mixture of sugar and mascarpone, and flavoured with cocoa powder. The recipe has been adapted into many varieties of cakes and other desserts. Its origin is disputed between the Italian regions of Veneto and Friuli-Venezia Giulia. The name comes from the Italian tirami su (lit. 'pick me up' or 'cheer me up').

Ingredients(Serves 😎
2 cups freshly made decaf coffee, preferably espresso strength
2 cups chilled heavy cream
1/2 cup powdered sugar
16 ounces mascarpone, at room temperature
3 tablespoons extra virgin olive oil
About 24 ladyfingers( Savoiardi)
2 ounces coarsely chopped dark chocolate
3 tablespoons unsweetened cocoa powder
Directions
Step 1

Make the coffee in a wide measuring cup; set aside to cool. Whip the cream and sugar until the cream is stiff. In a separate bowl, whisk the mascarpone and olive oil, then fold into the whipped cream.

Step 2

Choose a serving dish about 12x7x3 or 8 inches square (you can use any similar-sized dish, or go a little bigger if you have extra ladyfingers). Before you begin, map out a ladyfinger pattern in the dish so you’ll know the direction to line them up.

Step 3

To start, place a dollop of the cream in the bottom of the dish and use a spatula to spread it out a bit. One by one, quickly dunk a ladyfinger in the coffee and place it in the dish. Repeat until you have your first layer. Use a large spoon to dollop half the cream over the ladyfingers and a narrow offset spatula to smooth it out, getting into the corners. Sprinkle the chopped chocolate evenly on top. Repeat the sequence to make a second layer. Use a fine strainer or shaker-top jar to sprinkle the cocoa over the top. Cover and refrigerate from 4 hours to overnight.

Peppermint Espresso Martini

Forget sugarplums! If you've got visions of an espresso martini dancing in your head this holiday, you've got to try this peppermint espresso martini for a festive, minty twist!

Ingredients (makes 2 drinks)
2 ounces vodka
1 ounce Peppermint Coffee Liqueur, such as Kahlúa Peppermint Mocha
1 ounce chilled espresso
1 ounce simple syrup
Mini candy canes , for the rim and garnish
Instructions
If you'd like to rim your glass, dip the edge of the glass in a little simple syrup and then into a shallow bowl filled with crushed candy canes.
Fill your cocktail shaker or jar half full with ice. Add the vodka, peppermint coffee liquor, espresso, and simple syrup.
2 ounces vodka,1 ounce Peppermint Coffee Liqueur,1 ounce chilled espresso,1 ounce simple syrup
Secure the lid then shake for about 30 seconds to work up the foam.
Strain into two martini glasses and garnish the cocktails with a mini candy cane.

The pizza di Pasqua ('Easter pizza'), in some areas also called crescia di Pasqua, torta di Pasqua, torta al formaggio or crescia brusca, is a leavened savory cake typical of many areas of central Italy based on wheat flour, eggs, pecorino and Parmesan.

An Easter Classic!!

Recipe
Time: 2 1/2 hours, plus time for cooling
FOR THE DOUGH:
6 cups all-purpose flour, plus more as needed
1/4 teaspoon salt
1 pound chilled salted butter, cut into large pieces
5 large eggs, beaten

FOR THE FILLING:
8 ounces boiled ham, in 1/4-inch dice
8 ounces salami in 1/4-inch dice
8 ounces soppressata, in 1/4-inch dice
8 ounces mozzarella, in 1/4-inch dice
8 ounces provolone, in 1/4-inch dice
2 pounds ricotta
4 ounces grated pecorino Romano
10 large eggs, beaten
1 teaspoon pepper
1 large egg, beaten, for brushing crust.

1. For the dough: In a large bowl, whisk together 6 cups flour and the salt. Using a pastry cutter, large fork, or two knives, cut the butter into the flour until the mixture resembles coarse crumbs. Add eggs and knead for 1 minute. Add about 1 1/4 cups ice water, a little at a time, to form a cohesive dough. Knead the dough on a lightly floured surface until it forms a large smooth ball, about 5 minutes. Cover with plastic wrap and set aside for 30 minutes.

2. For the filling: Mix the meats, cheeses, the 10 eggs and pepper in a large bowl.

3. Heat oven to 350 degrees. Divide the dough into two pieces: two-thirds for the bottom crust
and one-third for the top. On a lightly floured surface, roll out the larger portion of the dough
into a rectangle to line the bottom and sides of a 10-by-15-inch glass baking dish, with some overhang. Add the filling and smooth it lightly. Moisten the edges of the dough with a little water.

4. Roll out the remaining dough to cover the top of the dish with some overhang.
Trim off excess dough and crimp the edges to seal. Poke several sets of holes
across the top with a fork. Bake for 45 minutes. Remove from the oven and brush top and edges
with the beaten egg, then return to the oven until golden brown, another 45 minutes.
Let pie cool completely before serving.
