Perhaps this is because Executive Chef Stephen Hoo 60th storey of UOB Plaza serves up three dishes that are exclusive to the high-flying branch of the franchise. The brand of Si Chuan Dou Hua, which has been around for around 26 years in Singapore and focuses on high quality dishes that are taken or are inspired by the tradition of Sichuan cuisine, emphasizes on the importance of changing up aspects in order to tailor it to the demographics of Chinese people in Singapore.

Start off the feast with a yu sheng feast that is wholly exclusive to Si Chuan Dou Hua at UOB, a yusheng using the famed pufferfish shipped to Singapore. It’s a luxury that many would leap at a chance to dine at. This year, they’ve shaped the pufferfish in the shape of a rabbit.

Table 33 Debuts with 180 sakes from Japan’s 47 prefectures Sake sommelier team introduces hot sake programme, aged sakes and exclusives 🥃

Table 33 a sake-focused bar located in Orchard, is set to bring exciting sake and drinking experiences in town. The open-concept bar at the basement of Palais Renaissance, is the brainchild of Janice Chi, also the co-founder of Ki Teppan & Rogama as well as Ishinomaki Grill & Sake.

A certified sake sommelier and sake scholar, Chi has also built a team of
fellow certified sake sommeliers in her team. Table 33 is a dream she has been incubating for many years. She shares, “My love for sake started when my manager left the restaurant suddenly and I had to learn about sake overnight. As I learnt more about sake, I realised it’s a fascinating world as there is so much care and respect behind the crafting of each sake. We have a lot of
reverence for the brewers behind the sakes, which is also why we have never put our own label on the sake. We want to respect each brewer and their work.

Over the years, I had many opportunities to discover the world of sakes, travelling through the prefectures, learning and forging friendships with the brewers, and in turn sharing it with our team. This art and friendship are what we hope to share at Table 33.” The bar is named Table 33 as a homage to the friendship and camaraderie during the pandemic years. Where the bar is currently situated was “Table 33” of Ishinomaki Grill & Sake restaurant. When Chi had to go through a knee operation in 2020, and could not move during 2 the pandemic, her team of staff ordered her to sit at Table 33 and took over all her responsibilities while she supervised everything from her seat.
“The team took care of me, brought me food, drinks and updated me consistently while I sat at Table 33. This space is special as it is a reminder of friendship for me.”

Five students from Year 2 Diploma in Restaurant & Culinary Operations, Republic Polytechnic, School of Hospitality, proudly present a delectable feast of Baked Oyster Biltmore, Pot Roasted Wagyu Beef Belly, and Salmon and Prawn Mousse En Croute, on Christmas Eve, and Wagyu Beef Steamship and Caramalised Apple, pot-roasted for 16 hours, Mint and Pesto Lamb Rack Beurre Noisette Ratte Potato, and Black Angus Beef Portobello Pithivier, on New Year’s Eve!


PARKROYAL COLLECTION Marina Bay, Singapore is very proud to collaborate with Republic Polytechnic, School of Hospitality, to provide the students with a 12-day experiential learning journey at the hotel from 19 to 31 December 2022.

The collaboration was designed to be a unique learning experience through full immersion and direct mentorship from the hotel’s Executive Chef Chan Tuck Wai.

The students were introduced to the concept of farm-to-table culinary experience, menu planning in advance to prevent food waste, and maximising the use of the large variety of fruits, vegetables, herbs and edible flowers from the hotel’s Urban Farm in order to boost food supply resilience.

The students were also attached to the culinary team at Peppermint, and had the opportunity to experience real-life culinary action, preparing the daily dishes for Peppermint’s buffet.

Well done to Lim Ken Cheng, Lim Jun Le Gareth, Ryan Tan Boh Zhang, Toh Yong Zhe, and Jefferson Ng Ming Cai, and we look forward to welcoming more students to our hotel for such experiential learning!

Celebrating Heritage this Lunar New Year at Rempapa ✨

Since the start of Chef Damian D’Silva’s journey in advocating Singapore Heritage cuisine, he has made it his priority to engage, interest, and motivate the next generation of culinary talents; extending a platform for them to learn, explore, and in turn, share their culinary stories with Singaporean diners.

As part of Rempapa’s Cultural Celebration Series, Chef Damian commemorates this Lunar New Year with a celebratory fare curated by his team of young chefs – Head Chef Alan Chan, Sous Chef Chit Pang, and Chef Chee Seng – at Rempapa from 9 January to 5 February 2023. Five festive dishes reflecting the fond personal memories of festive favourites of Chef Damian and his team are available to diners on an a la carte basis.

In addition to these dine-in highlights, a collaboration with Genevieve Lee from Sourbombe Artisanal Bakery also brings special festive creations for self-collection and island-wide delivery. The Rempapa Sourbombe A-bun-dance Box and other delights are available from 3 to 20 January 2023. Pre-orders open on 28 December 2022.
