Another substitute for fingerling potatoes, will be baby potatoes.
Ingredients:
20g yellow and red cherry tomato
2 lemon
2 lime
2g parsley, chopped
2g coriander, chopped
25ml olive oil
25g fennel
5g baby radish
5ml orange juice
10g chives, chopped
10g avocado
5g black olive, sliced
5g caper
100g fingerling potato, peeled
160g salmon fillet
Salt and pepper, for seasoning
Olive oil, for drizzling
Method:
Step 1: Slice up cherry tomatoes and olives and add them to a bowl, zest lemon and lime rind into the tomatoes and olives, slice up the lemon and lime into quarters and squeeze the juice out to marinate the cherry tomatoes and olives.
Step 2: Sprinkle parsley and coriander into the bowl and add in a handful of capers. Season with salt and pepper. Drizzle in olive oil and mix and set aside.
Step 3: With a mandolin, slice up fennel and radish and place them into another bowl. Zest the orange before slicing into quarters and squeeze out juice to marinate the fennel and radish. Drizzle olive oil and add chives. Mix the salad and season with salt and pepper.
Step 4: De-pit and dice up the avocado into bite sized pieces. Add to the first bowl and mix thoroughly.
Step 5: Boil fingerling potatoes for 25-30 minutes on medium heat. Crush with fork and season with salt, pepper, chives, and olive oil. Crush with fork and season with salt, pepper, chives, and olive oil. Mix well. Zest with lemon rind.
Step 6: Heat up pan to a medium heat. Drizzle olive oil and coat it thoroughly.
Step 7: Season salmon fillet with salt and pepper. Place salmon fillet on the pan, skin side down, and cook salmon till the fillet
