Potato kokis are one of my girl's absolute favourites 😍 She loves these crunchy, savoury snacks so much. So I made some only for her with lots of love ❤
🔸125g Boiled potatoes (Boiled and cut into small pieces)
🔸1 Cup Rice flour
🔸1 1/2 cups Thick coconut milk
🔸1 egg
🔸1/2 Tsp Chilli powder
🔸Pinch of Turmeric powder
🔸Salt to taste
🔸1 Tbsp Chopped curry leaves
Put rice flour, boiled potatoes, coconut milk, egg and salt into a blender and blend until you get a smooth batter. Now put the batter into a bowl add chopped curry leaves, chilli powder and turmeric powder and mix well leaves aside for 10 minutes and make kokis.
P/S
I used a nonstick kokis mould to make these kokis. So if you are using a nonstick mould do not dip the very hot mould into the batter. The batter will not stick to the mould. Always make sure the mould is slightly hot when you dip the batter.

Fresh Anchovies dry curry / අමු හාල් මැස්සො මිරිසට හින්දලා
1 1/2 kg fresh Anchovies
Salt to your taste
1 1/4 Tsp pepper powder
3 Tsp Chilli powder or according to your taste
2 1/2- 3 Tsp Roasted curry powder
Small piece of cinnamon
3 Tsp Goraka paste (Garcinia)
1 1/2 Cups water
5 Cloves of garlic chopped
Curry leaves
Rampe (Pandan leaf )
1 1/2 Tbsp oil
Clean and wash the Anchovies and leave aside. In a pan, add salt, pepper, chilli powder, roasted curry powder, goraka paste, garlic, curry leaves, rampe and water. Now add the anchovies and slowly mix to coat in the spices. Then drizzle the oil on top and leave aside for about one hour. After, cook the anchovies until dry in medium heat. Do not stir the curry because of the tendency for the fish to break. Just shake the pan from time to time. Serve with boiled hot rice or string hoppers.

Cheesy chicken kochchi bites
This is one of my family's favorite snacks. So quick and easy to make, and so delicious!
◾400g minced chicken
◾1Tsp salt or according to your taste
◾1 Tsp pepper powder
◾1 1/2 Tsp Garlic powder
◾1 Tsp Ginger powder
◾1 Tsp Onion powder
◾1 Tsp Oregano
◾3-4 Bird chillies/ kochchi (නයි මිරිස් ) finely chopped
◾2 Tbsp chopped parsley
◾5 Tbsp bread crumbs
◾Cheese cubes (Cheddar or Mozzarella)
Batter
◾1/2 cup Flour
◾1 egg
◾1/4 Tsp salt
◾1/4 Tsp pepper powder
◾Sufficent amount of water
◾Bread crumbs
◾Oil for deep frying
◾Add spices, herbs, kochchi, breadcrumbs to the minced chicken and mix well until well combined.
◾Apply oil on your hands before you shape the balls
◾Make sure to double coat the balls
◾Freeze for 30-45 minutes before frying.
◾I always make a big batch of these and freeze them. That way I can fry these delights up whenever I want
