Base
- 400 g gluten free biscuits (cracked into small bits)
- 3 bananas (ripe)
- 1 /2 cup coconut milk
- 1/2 cup peanut butter (I used from @gymbeamro )
- 1/2 cup maple syrup (dates syrup)
Topping
- vanilla pudding powder (sugar free)
- 1 L coconut milk
- 1/4 cup maple syrup
In a large bowl add the biscuits, bananas, coconut milk, peanut butter and maple syrup, blend well and spread into a large cooking pan.
In a pot, add 1 L milk and the vanilla pudding powder, on a stove, mix until it gets thick and add the maple syrup for a kick of sweetness.
Pour the pudding onto the base, let it cool down and put it in the fridge for 1 h.
You can add some walnuts on top.

- 400 g lactose free powdered milk
- 1 cup walnuts (can use any nuts you prefer)
- 1/2 cup organic peanut butter (I used from @gymbeamro )
- 1 cup coconut milk
- 1/4 cup coconut oil
- vanilla extract
Break the biscuits into small pieces, add peanut butter, mix well and spread it evenly, onto a parchment paper , as a base and set aside.
In a large bowl, mix the powdered milk, coconut milk, coconut oil, sweetener and add vanilla at the end, for a kick. Pour the mix over the biscuit base, add some nuts and let it sit in the fridge for a few hours.
Cut it into pieces and enjoy it while it lasts 😁🤪

Here's a quick and delicious snack, way better than chips you buy in a store😉
Just cut some potatoes (I had also sweet potatoes), boil them for 20 minutes, add them into a cooking pan and press them with a small jar. Add salt, pepper, rosemary and bake them for 15 minutes, until brown.
For the sauce take 2 avocados, lemon juice (add some yoghurt if you want) and mix well until you get it. Spread the sauce and enjoy this yummy snack !😀

- 1 ripe banana..mashed 😃
- 1 tbsp smooth peanut butter from GymBeam
- 1 cup vegan protein (your choice)
- vegan milk (your choice)
- chocolate chips or flakes (I grated some #stevia chocolate😋)

You need
- 2 cups raw quinoa (rinsed)
- 2 bananas (peeled)
- 1 tbsp maple syrup
- 1 tsp baking powder
- 1 cup steel cut oats
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1 tbsp melted coconut oil
- 1 cup coconut milk (almond milk)
In a high speed blender mix all ingredients, until smooth. Fill each muffin up to 3/4 their level. Preheat the oven to 350F (180 C). Bake them for 35 to 40 mins, or until golden brown. Cool down on a rack and enjoy them right away ☺️

This gluten free and lactose free cheese cake, made with raspberry is a refreshing dessert, delicious and filling.
Ingredients
- 400 g whole grain biscuits (sugar free)
- 80 g melted butter (lactose free)
- 150 g raspberries
- 500 g lactose free mascarpone cheese
- 1 tbsp peanut butter @gymbeamro
- 1 tbsp of corn starch
- 1 tbsp of raw honey
Put the biscuits in a food processor or blender and mix them, add butter and pour the mix into a pan, all the way up on the walls of the pan.
Mix the mascarpone cheese with raspberries , add the starch and pour the mixture over the biscuits.
Top the cake with walnuts, if you like.
Keep in the fridge overnight.

Try this easy and delicious morning energy breakfast.
Toast two slices of bread, with a bit of olive oil. ( I used buckwheat bread).
Prepare a frying pan, put a bit of butter, add the eggs and stir until you get the omelet nice and smooth.
Add the omelet on the toast, add avocados and sprinkle some chilli flakes.

VEGAN Cashew Icecream ...Chocolate is a must 😀 -gluten free, lactose free You need -1 cup soaked cashews -1 cup pitted dates -1 cup almond or coconut milk -1 stevia chocolate bar (melted) -1/3 cup coconut oil -1 tsp vanilla extract Soak the cashews for 4 hours (if you're in a hurry, put boiled water and soak them for 30 minutes). Put them into a high speed blender, along with the milk and vanilla extract, blend and pour the mix into a glass pan or one you can put in the freezer. Leave the pan for a few hours to freeze. In the blender add the dates with coconut oil, mix them and pour them over the frozen cashew. Melt the chocolate with some coconut oil and add it over the layer of dates. Amazing CHOCOLATE Oatmeal banana bread. What's a banana bread without chocolate? I asked myself the same and the answer was I need more chocolate. Ingredients: - 3 very ripe bananas ( if you don't have, put a normal banana in the microwave and cook it for 2 3 minutes) - 3 cups oatmeal - 2 eggs - 1 tsp baking powder - 1/2 cup almond milk (or other lactose free milk of your choice) - 1/3 cup cocoa powder - sugar-free chocolate chips or flakes (as many as you want) INSTRUCTIONS Peel the bananas, mash them, add oatmeal, eggs, milk, cocoa, baking powder and the chips. Mix them and pour the mixture in a baking pan, on a parchment paper. Bake for 45 minutes at 180 C. Take out, top with some chips after it cools down. Vegan at a whole new level 😀. This pasta sauce is so delicious, it will delight your taste buds☺️. INGREDIENTS for the sauce: - 1 chopped onion - 2 ripe avocados - 1 cup of soaked cashew nuts (soaked for at least 4 h) - pinch of salt , chilli flakes and pepper - water from the boiled pasta Chop and saute the onion in a pan, with a bit of olive oil, just until it gets a little brown. Add all ingredients in a high speed blender, add water from the boiled pasta, mix them until creamy. Pour the sauce over the pasta, sprinkle some fresh basil and voila ! You got yourself a nice, delicious lunch / dinner. I used gluten free colored pasta, but feel free to experiment with any of your favourite.
